On Monday, April 11, WCFR was fortunate to have one of the finest meals ever served as a part of our Guest Chef series. Thanks to Northern Quest Resort and Casinos, and Chef Michael Lindsey, we treated our guests to a wonderful New York strip bison dinner with a mushroom demi-glaze. Bison meat was featured because it is a lean red-meat, and part of our goal with the dinner series is to give our guests an opportunity to try something new, that is also healthy. Along with the bison, we served orange-essence sweet potatoes and a beautiful ratatouille of vegetables with squash, sweet red peppers and red onions. We kicked off the meal with a cucumber - jicama salad. Several of our community supporters, including a couple of chefs, visited the program that night and raved about this delicious dinner. In the entire dinner, which provided nearly 100 servings of food, only 2 tablespoons of fat were used in the preparation of the entire meal! Thank you to Michael for providing his time and expertise to treat our guests to such a wonderful meal! And thank to you Northern Quest Resort and Casino for providing the food. The success of this series only fuels our enthusiasm for our future direction. As we ponder our future and maybe a new location, we have developed a vision for WCFR that includes taking a larger role in the community as nutrition advocates. We recently updated our mission statement to include this important element in our services: Women's & Children's Free Restaurant is a vital safety-net that fills nutritional gaps for women and children in need while fostering dignity and respect, both within our Restaurant and in the community. | The Tea Will Sell Out! | We've had an amazing response to the call for table captains and guests for our 5th Annual Spring Tea. We are almost sold out, so if you are interested in attending, contact Karen Orlando ASAP. She can be reached at volunteer@wcfrspokane.org or 324-1995, extention 300. Our Spring Tea Committee, headed by Molly Wendle and Judy Looper, have also made fantastic plans for a silent auction of flower arrangements in tea pots and beautiful cakes. We'll have more vendors than ever to shop from including some of our old favorites, but a lot of new vendors too! See the sidebar for a complete list.
We also have the support of several local businesses in other ways. Northwest Beauty is our Matching Sponsor and also has a nice surprise for each guest. We also have sponsorship from Bloems Chocolates and Flowers of Spokane. And a sweet shout-out to Bruttles for their donation of candy at every place setting!
Our 5th Annual Spring Tea is on May 7, at The Lincoln Center. Shopping begins at 11:30 and the tea starts at 12:30. Our menu includes Chef Karen's winning banana bread recipe that is topped with a delicious caramel-streusel topping. Tickets are $40 per person.

| Tip of our Toque to Greg Cazzanigi and Northwest Beauty | |
WCFR is blessed to have many friends. Today, we would like to tell you more about one of them - Greg Cazzanigi and Northwest Beauty. Greg is the owner of Northwest Beauty and sponsored our first fundraiser in 2006. He has been a sponsor every year. This year, Greg, and Northwest Beauty will be our very first "matching sponsor" at our Spring Tea. Northwest Beauty will match the donations made at the tea, essentially doubling every individual contribution made that day!
Greg is a home-grown hero, who started his business in 1991 when he was right out of college at the age of 24. Although he graduated from Gonzaga University with degrees in religious studies and philosophy, he grew up in the beauty business, as both of his parents were stylists and owned a salon.
After opening his first salon/store at Northtown Mall, Greg has gone on to open 13 stores across the northwest. He offers his employees a medical plan and continuing education opportunities.
Greg is a quiet giver. He's a true friend of the Restaurant and always thinking of our ladies and how he can help them. Every year, he gives WCFR thousands of dollars of beauty products, that we can give to our ladies.

| Not Just Free - But Nutritious too! | |
One of the reasons we are so excited at WCFR is our vision for having a healthier impact on our community - especially the community of low-income women and children. Having a balanced diet is such a challenge on a small food budget - potatoes, pasta and ramen go a long way for a little bit of money, but when that's all you can afford, it's not a very balanced diet. Fruits and vegetables are already expensive, but have increased 23% in the last 3 months!
In our grant applications last year, we made our case to a couple of funders that our meal program needs to purchase healthier food, in order to provide a more balanced diet to our guests. The Empire Health Foundation has provided funding so that we can purchase fresh food and lean proteins. This past Tuesday for instance, we served Tilapia. Our guests loved it! Many asked for seconds. Tilapia is low in sodium and is a good source of protein and vitamin B-12. A single serving of Tilapia is 27 calories, 84% of which is protein!
Compare that to a serving of ramen soup - which many of our ladies eat on a regular basis. A single serving of ramen soup is 190 calories, 8% of which is protein. And ramen soup has 20% of the recommended daily value of sodium. So it is with a lot of pride and gratefulness that we can serve this healthy dinner.
Other foundations or companies that have supported our nutritious direction include Burlington Northern Sante Fe (to purchase fresh food for our Friday Fresh Market), the David & Dorothy Pierce Trust (for a salad bar and some of the ingredients to go with it), Principal Financial and Albertsons (to purchase healthy food) and Catholic Charities Rice Bowl (to purchase milk.)
Along with providing healthier food, we are also creating opportunities for our guests to learn how they can eat healthier at home. Aleysa Oleynik, Registered Dietitian (and WCFR volunteer) has been providing a "nutrition kiosk" at our Guest Chef dinners, to help our families understand the elements of healthy eating. She provides recipes, tasting sampler and fun visuals so even kids can learn about nutrition.
Another one of our nutrition partners is Craig Hunt, a Nutritionist and Registered Dietitian from Parkside Physical Therapy and Nutrition. Craig is teaching a 6-part nutrition class to some of our ladies. Each meal is covered in a separate class and we will also cover snacking and emotional eating. The class covers a lot of the nutrition basics and we are providing printed materials, recipes and ingredients to each of the participants. Now the ladies will have the knowledge and some of the resources to create a healthier diet. |
