THE CONVENTIONS ARE COMING!
The Republican Convention begins next Monday, August 27th in Tampa. The Democrats will gather in Charlotte, NC a week later on Labor Day, September 3rd. Since we already know who the nominees are, they may not be as exciting as they used to be, but there are bound to be some surprises , as well as a few 'bloopers!' There will be extensive coverage of both conventions by several networks and streaming live coverage is also planned for your computer throughout the day. Prime time coverage will probably be limited to a couple of hours around 9 p.m., so check your local listings. Keynote speaker for the GOP will be Governor Chris Christie of NJ. The candidate's wife, Ann Romney will also speak and FL Senator Marc Rubio will introduce Mr. Romney. On the Dem's side, speakers will include Michelle Obama and former President Bill Clinton. Have you ever wondered why the political images feature a donkey and an elephant, rather than - say, a beautiful horse or a regal lion? You may be surprised at the answer in the post below!

 WHY THE DONKEY AND THE ELEPHANT?
The Donkey - Presidential candidate Andrew Jackson was the first Democrat ever to be associated with the donkey symbol. His opponents during the election of 1828 tried to label him a "jackass" for his populist beliefs and slogan, "Let the people rule." Jackson was entertained by the notion and ended up using it to his advantage on his campaign posters. But cartoonist Thomas Nast is credited with making the donkey the recognized symbol of the Democratic Party when it first appeared in a cartoon in Harper's Weekly in 1870. It was supposed to represent an anti-Civil War faction, but the public was immediately taken by it and by 1880 it had already become the unofficial symbol of the party.
The Elephant - The same political cartoonist, Thomas Nast, was also responsible for the Republican's elephant. In a cartoon that appeared in Harper's Weekly in 1874, Nast drew a donkey clothed in lion's skin, scaring away all the animals at the zoo. One of those animals, the elephant, was labeled "The Republican Vote." That's all it took for the elephant to become associated with the Republican Party. |

So why not make batches of different treats, freeze them and then pull a couple out to have ready when the kids get home from school? This summer, the John Carroll High School yearbook staff attended the YearbookPalooza convention hosted by Herff Jones in Orlando, Florida. Forty schools with more than three hundred high school students participated in the annual conference, including 18 JCHS students. Congratulations to John Carroll for earning the highest award achievable, the coveted 1st place in the "Overall Theme Competition." Congratulations also to Diana Lanza who earned 3rd place in the "Overall Photography Competition" in Orlando.

RECIPE OF THE WEEK
OATMEAL ALMOND CHOCOLATE CHUNK COOKIES
A healthy cookie?...Well, sort of. They're full of protein, whole wheat flour, oatmeal and dark chocolate (which, you know...is good for you). Never-mind that it's a cookie! And you can freeze them, as in the post above.
Ingredients:
1 3/4 stick (14 tablespoons) unsalted butter
3/4 cup granulated sugar 1 cup brown sugar 2 eggs 1 1/2 teaspoons vanilla extract 1 cup almond butter 1 1/4 cup whole wheat pastry flour 3/4 cup all-purpose flour 1/2 teaspoon baking powder 1/2 teaspoon baking soda 1 teaspoon salt 1 cup ground almonds 1 1/2 cups old-fashioned oatmeal (not quick cook) 8 ounces semi-sweet or dark chocolate chunks or chips
Directions:
Line baking sheet with parchment paper or silicone baking mat. Preheat oven to 350 degrees
Combine flour, baking soda, baking powder, and salt. Set aside. Beat butter until creamy. Add sugars beating until fluffy, approximately 3 minutes. Scrap the bowl as necessary. Beat in almond butter until incorporated. Beat in vanilla and then eggs, one at a time.
Gently stir in the dry ingredients (I switched to the paddle on my kitchen aid mixer). Add ground almonds and oatmeal and stir until just incorporated. Stir in the chocolate chunks.
Roll cookies into 2 Tbs sized balls. Place on baking sheets and bake cookies for 10-12 minutes. Edges should be slightly browned and the cookies puffed. Cool on sheets for 5 minutes before transferring to a cookie cooling rack.
Freeze any leftover cookie dough for later use.

- The Humane Society of Vero Beach & Indian River County's "Yuppie Puppies" meet every 2nd Thursday of the month at noon at the United Way Building. The "Yuppie Puppies" are a group of young professionals who love animals and help to raise money for the Humane Society through various fundraising events while socializing and getting to know other animal lovers in the community.
