 It's hard to believe that this will be the last weekend in April. High school students are looking forward to proms  and graduations, and soon many of our subscribers will be heading North for the summer months. I sometimes wonder if those summer escapees know what they're missing by not being here in the summer when our community slows down a little. As it slows, so will our community calendar allowing many individuals and organizations a chance to catch their breath from a very active 'season!' I do love the summer months when everyone seems to enjoy those "lazy, hazy, crazy days of summer".  Just like the song lyrics say, "with  picnics and days at the beach always cooled  by our ocean breezes". If you have any tips about something you especially enjoy doing here in the summer or a favorite cook-out recipe you'd like to share, you can post it on our Community Bulletin Board. Just CLICK HERE.  

 

To keep up with what is going on, make sure you pick up a copy of our printed calendar for MAY that will be distributed next week. Some of our distribution points are below.  Please send me an email requesting calendars if you would like to serve as a distribution point or if you would like to distribute them to your organization. We print 5,000, but they go faster each month as word is spreading that our wonderful calendar exists! Students are encouraged to learn about threatened and endangered plants and animals through art.  The U.S. Fish and Wildlife Service's office  is hosting an art contest open to all students grades 1-12 in public, private or home schools on the Treasure Coast (Indian River, Martin and St. Lucie Counties).  To enter, the student will draw or paint, in an original artwork, a federally listed threatened or endangered species from south Florida.  One winner will be selected per grade along with an overall winner . Each will receive $100 US Savings Bond and the school of the overall winner will receive $150 gift card for science and or art supplies. Entries must be postmarked by May 11, 2012 and sent to:

LEARN TO KNIT FROM MARTHA STEWART

 

This picture of Cary Grant is from a movie, but in centuries past it was the men who knitted, not the women. Today, more and more men are "coming out" as knitters. Former football great Rosey Grier advocated both knitting and needlework, and even published a book about needlepoint for men. (Rosey, who was known as "the gentle giant," was the man who tackled Bobby Kennedy's assassin and wrestled the gun from him.) As for the women, Julia Roberts is one of many stars found knitting on the set between takes and she has taught Cameron Diaz to knit. Other knitting celebs include Goldie Hawn, Catherine Zeta-Jones, Brooke Shields and even Madonna. Lorraine Cosmetics of the UK did a search to find the "Most Beautiful Face" in all of Great Britain who had not had any plastic surgery and was pictured without makeup. The winner by public vote was 18 year old Florence Colgate. The competition was judged on a ratio formula for beauty devised by the ancient Greeks that said that the distance from the eyes to the mouth should be one third of the face. Women Build leader Sue Croom encourages anyone interested to get a crew together and join other WB gals in Fellsmere at Habitat's Grace Meadows neighborhood from 7:30 am til noon. You will help with one of many different tasks and need no prior experience or expertise. All construction newbies are welcome! You'll learn a lot and make some wonderful friends. RIDE AGAINST HUNGER

The Ride began on Sunday, April 22 from Costa Mesa, California and will end at a welcome home rally at Waldo's inside the historic Driftwood Resort on Vero's beach Tuesday, May 22 at 5:30 p.m. His goal is to raise $50,000 to be split evenly between the Harvest Food and Outreach Center of Vero Beach (which distributes low cost food locally to those in need) and Stop Hunger Now (an established international organization which packages millions of sample meal packets to be distributed around the world, primarily through school feeding programs in hunger-stricken regions of the world).

RECIPE OF THE WEEK


Grilled Fish Tacos

 

 FAST FISH TACOS
Ingredients:
1 pound boneless & skinless tilapia fillets, cut into 2-inch pieces, rinsed & patted dry and seasoned with olive oil, salt and pepper 
3/4 cup sour cream
3/4 cup + 2 Tablespoons fresh salsa (chunks of tomato and onion mixed with with lime juice and cilantro)
12 corn or flour tortillas, warmed
1 1/2 cups shredded cabbage or lettuce
Optional garnishes: cheese & avocado
 
                                Directions:                                      
1.  Heat broiler, with rack in highest position. Place fish on rimmed baking sheet; drizzle with olive oil & season with salt and pepper. Broil until fish is lightly browned on top, 5-10 minutes, until flesh is opaque throughout.
2.   Meanwhile in a small bowl, mix sour cream with 2 Tablespoons fresh salsa. (chunks of tomato and onion are mixed with lime juice and cilantro
3.   Divide fish evenly among tortillas and top with shredded cabbage, sour cream and fresh salsa.
Tips: Any flaky, white fish may be substituted for Tilapia.
  Using light sour cream or plain yogurt is just fine.
  Using fresh salsa is important. It's a wonderful, easy  addition.  
  Use corn tortillas for Gluten free.

  • Sunbonnet Sue Quilters Guild - We meet Every Thursday and quilt for our own enjoyment. We also make quilts for various charities to raffle and/or give to those less fortunate.
