Last weekend I took my mentee from Youth Guidance to the Kiwani's', 'Take A Kid Fishing' event!  I have to tell you that we had a ball! I hope many of you jumped at the opportunity and were there with us under the Barber Bridge. More than 250 children gathered for a fun, tech free day. This was one of those events that is a 'no frills,' focus on what really matters, and leaves you feeling great kind of events.  Though my little partner and I did not catch anything, I was impressed by the number of beaming, smiling faces that were constantly running by us with a squiggling fish dangling from a pole, heading towards the officials to be measured.  These youngsters were quite the anglers reeling in more than 1,000 fish. I saw a hammerhead shark, stingray, puffer fish and many, many other impressive, gasping fish being reeled in by some youngsters that were barely out of diapers. Yes, it was quite a humbling experience and I took the opportunity to explain to my 'mentee' that some days you've got it and other days you just have to revel in the accomplishments of others and enjoy their display of pure and unrestrained excitement! Thank you Kiwanis for a day that will long be remembered, for the fishing pole and bait, for the cookout that allowed us to enjoy the All-American grilled hot dog and hamburger. It was the perfect ending to a perfect day. With Father's Day around the corner and all the talk aboutfishing event  fishing....I feel I must pay homage to my late father who was quite the angler; Jerome N. Matthews. He caught many a world record in his lifetime, a couple of which still stand today. hmmm...   guess I didn't get that gene! But, I don't give up easy and my mentee and I will be back next year! ... 'Til then we congratulate Gustavo Sandoval who caught the biggest fish and is pictured here receiving a new rod & reel and plaque from Kiwanian, Al Sammartino. Thanks to all who made this event possible! What an incredible community we live in!

BILL PENNEY RAISED MORE THAN $8,500 FOR RED CROSS

To celebrate his 55th birthday, Bill Penney - President and CEO of Marine Bank - rollerbladed 55 miles, asking the community to support his trek with donations to the American Red Cross North Treasure Coast Chapter. Bill began his skate at South Beach in Vero Beach, pushing off around 5 a.m. Saturday, June 4 and was joined by five of his friends on bicycles. The American Red Cross had an Emergency Response Vehicle on hand throughout the ride, providing water and food to keep up the groups' energy. Bill completed his skate in 6 hours 34 minutes, raising more than $8,500 for the American Red Cross.

Best-selling author Debbie Macomber not only blessed the group at their May luncheon with her encouraging words (she's such a great story teller!), she also blessed them with numerous books that she brought to give away during the monthly drawing. But even more than that, she blessed the group with FOUR HUNDRED DOLLARS. Yes, tucked away in four of the books were one hundred dollar bills. The only catch was that the "lucky" recipient has to find someone to bless with that $100. There are surely some uplifting stories ahead that we can't wait to bring to you. Stay tuned!

Indian River County Exchangites were well represented at the Florida District Exchange Clubs Convention held May 19-22 in Deerfield Beach. Six members of local Exchange Clubs will serve as officers and directors of the District Board. Eric Menger will serve as Past President, Judy Landgrave is Vice President of Americanism, and Diana Walker will continue as Secretary. Other local individuals installed are Nancy Gollnick, Roy Thompson, and Kim Prado who will serve as Division Directors in the coming year. Congressional Rep. Allen West (FL-22) was the featured speaker at the One Nation Under God Breakfast.

    UNDERSTANDING LONG TERM CARE INSURANCE  

Long-term care insurance (LTC or LTCI) helps provide for the cost of long-term care beyond a predetermined period and it covers care generally not covered by health insurance, Medicare, or Medicaid. Individuals who require long-term care may not be sick in the traditional sense, but instead, are unable to perform the basic activities of daily living such as dressing, bathing or eating.  About 60% of individuals over age 65 will require at least some type of long-term care services during their lifetime, but 40% of those receiving long-term care today are between 18 and 64. LTC insurance generally covers home care, assisted living, adult daycare, respite care, hospice care, nursing home and Alzheimer's facilities. It will pay for a visiting or live-in caregiver, companion, housekeeper, therapist or private duty nurse up to 7 days a week, 24 hours a day (up to the policy benefit maximum).

In 1945, twenty-four years after she was created, Fortune magazine named  Betty Crocker the second best known woman in the entire United States - right behind first lady Eleanor Roosevelt. She even had her own radio show. (Not bad for someone who never really existed!) Betty was, and still is, the figment of a clever advertising campaign's imagination. Her appearance has changed over the years to keep up with the times, but unlike the rest of us, she never got older!  The current image,  created in 1996. is a multi-racial and multi-ethnic composite of 75 women over the age of 18. Betty Crocker is a division of General Mills, and fortunately, the coupons on their website  are very 'real'. In addition to baking products, General Mills products include  Yoplait, Prevacid, Garnier hair products, Green Giant, and Rogaine, as well as many others. The coupons change monthly and some are as much as $5.00 off, but to print them, you do need to register on the website. CLICK HERE.

Tenderloin Tips

 

8 TERIYAKI CHICKEN KABOBS

Ingredients  

1 pound boneless skinless chicken breasts, cut into 1-inch cubes

3/4 cup Teriyaki sauce for marinade, divided

2 zucchini, cut in 1/2-inch cubes

16 cherry tomatoes

1 red and/or 1 green bell pepper, cut into 1-inch pieces

1 can (8 ounces) pineapple slices, drained and cut into 1-inch pieces

Directions

1. Place chicken in large resealable plastic bag or glass dish. Add 1/2 cup of the marinade; turn to coat well. Reserve remaining marinade for brushing.

 

2. Refrigerate 30 minutes or longer for extra flavor. Remove chicken from marinade. Discard any remaining marinade. Alternately thread chicken, vegetables and pineapple onto 8 skewers.

 

3. Grill kabobs over medium heat 10 to 15 minutes or until chicken is cooked through and vegetables are tender, turning occasionally and brushing with reserved marinade.

 

Grilling Tip: If using wooden skewers, soak in water for at least 30 minutes to prevent burning. If using metal, spray with non-stick cooking spray.

This summer Gifford Youth Activity Center will offer camp programs infused with plenty of fun-filled recreational activities, while focusing on character development, decision making skills, literacy, academic retention, and much more. The power of this fresh, innovative approach is unlimited. Walter M. Jackson Haven Camp 2011 for students entering grades 1-12 will include three hours each day of academic instruction followed by an afternoon of fun activities. The program is held 7:30am-5:30pm, Monday through Friday, June 20- August 12. The cost is $40.00 per week for the first child and a sliding scale for each additional child in the same family. Camp registration fee includes lunch, skating, bowling, and all field trips. Applications are available now and will be accepted with the first week's payment. The Treasure Coast Victoria Fleet 105 meets every Saturday, weather permitting, at Indian River Estates in the 7400 block of State Road 60, on the right side. After the guard gate, go to the stop sign and turn right. Follow the road along the water until you come to the dock on your right. We start racing our radio controlled Victoria sailboats at 10 a.m. and finish at approximately 11:30 a.m. There are courses marked off in the water with floating buoys and we decide which course we will run each time we meet. Come out to see the races or try your hand at sailing with the radio controls.

This summer Gifford Youth Activity Center will offer camp programs infused with plenty of fun-filled recreational activities, while focusing on character development, decision making skills, literacy, academic retention, and much more. The power of this fresh, innovative approach is unlimited. Walter M. Jackson Haven Camp 2011 for students entering grades 1-12 will include three hours each day of academic instruction followed by an afternoon of fun activities. The program is held 7:30am-5:30pm, Monday through Friday, June 20- August 12. The cost is $40.00 per week for the first child and a sliding scale for each additional child in the same family. Camp registration fee includes lunch, skating, bowling, and all field trips. Applications are available now and will be accepted with the first week's payment. Enrollment is limited and spaces will be filled on a first come, first served basis. Gifford Youth Activity Center is located at 4875 43rd Avenue in Vero Beach.
