Happy Mother's Day

 A BUSY WEEK!

There's so much to celebrate this week! As we told you in last week's issue, it's National Teachers' Week, and today is Cinco De Mayo, the festive Mexican holiday we can all enjoy. (Look for a special Mexican recipe below.) Saturday will be the televised running of the 137th Kentucky Derby and  Sunday is Mother's Day. To all of our wonderful Moms, we hope you will relax, have fun and enjoy your special day!

IS A POSITIVE PERSON  

 

A few weeks ago, Ashley Franke nominated her Mom. Karen L. Frank,  as a "POSITIVE PERSON".  When we learned about this inspiring lady, we thought it was appropriate that we save the post as a surprise for Karen for Mother's Day! According to Ashley, Karen is - "the most positive and encouraging influence  in my life, but she is also a business woman, active in the local community and is always giving back. She is highly respected by everyone who meets her and will leave you with a smile."  Ashley says her Mother is always pushing others to give it 'their all' in anything they do in life and  knows that, not only herself, but many others wouldn't be where they are today without her Mom's positive influence." 

 

Karen has been in radio 19 years and in management the past 8 years. This has allowed her to be involved with a lot of local charities. Karen says that the great thing about radio is that is assists in getting the word out about different charitable events which hopefully results in greater ticket sales. This ultimately helps each charity obtain their goals and fulfill their mission. One of her favorite charities is Harvest Food and Outreach Center.  She was on the committee that created and executed two of their annual events - the Radiothon and The Shopping Cart Parade. As Station Manager, she is proud of the fact that she was instrumental in her company receiving the 'Company of the Year' award in 2009 from the Indian River County  Chamber of Commerce - and  the 2009 Workforce Solutions- 'Best Places to Work in St. Lucie County.' Karen considers her biggest accomplishment is when others who have worked for her go on to achieve great things and thank her for the role she played in their lives. She says she is  inspired by strong and independent women who accomplish great things. Her advice is to "Work hard to get what you want.   Set your goals and don't let anybody throw you off course in accomplishing them."

Along with her work, Karen enjoys spending time with her family: her husband John, Ashley and her son Aaron who just started medical school.

 

Ashley said that as Station Manager, Karen frequently gives out awards and she thought it was time her Mom was on the receiving end! We certainly agree and are happy to recognize Karen a "POSITIVE PERSON." Thank you, Karen, for what you have done in our community  and have a  very, very HAPPY MOTHER'S DAY! 

 

                                  

  

 KENTUCKY DERBY - SATURDAY, MAY 7, 2011

It doesn't seem possible that the first Kentucky Derby was run in 1875, just 10 years after the end of the Civil War! This Saturday at Churchill Downs will be the 137th running of this celebrated race. It's not too late to invite a few friends over to sip a Mint Julep and watch the race with you. Note: Our eyes will be on a horse named 'Uncle Mo' that we saw win a race by several lengths at Gulfstream last month. He's not the favorite, but if he runs the way he did that day, he could take it all!

THE AMAZING RAID!!

 

The amazing raid in Pakistan that resulted in the death of Usama Bin Laden was performed by a group of incredibly brave Navy Seals. This special force of the Navy is frequently called upon to perform tasks that others couldn't handle. We are fortunate that we have the history of this group nearby at the NAVY SEAL MUSEUM  in Ft. Pierce. A move is now underway in Washington to make it a National Memorial, and after these recent events, we think you will be hearing more about that. If you or your children haven't seen it, plan a visit soon. in Current Events

 
Saint Edward's School's 4th grade classes placed 2nd in the Nation on the National Current Events League Tests, and the 5th grade classes placed 3rd in the Nation. The National Current Events League administers 4 meets during the School year. Each meet consists of 30 questions. According to their web site, "The questions are selected from the following areas and are appropriate to the individual grade level involved: General News, Arts & Entertainment, Science & Health, Business & Finance, Sports." This is the second year in a row in which the Saint Edward's Lower School students ranked among the top 3 nationally in their knowledge of current events. Students credited a great teacher (Social Studies teacher Mrs. Molly Calleri), with their enthusiasm for watching the nightly news and playing "NewsBowl" weekly.
 
Mrs. Calleri divides the class into two teams once a week and runs through a list of current news questions, ranging from politics and international issues to sports and entertainment. "We also discuss world leaders," she adds, "and where the countries are located geographically." Quizzed about their parents' role in their success, most 5th graders felt that their parents are smarter than a 5th grader, but that when it comes to news, the Saint Edward's 4th and 5th grade students are an inspiration to their parents... and to us!  CONGRATULATIONS!  You make us all proud!

LEAVING FOR THE SUMMER?

If you're cleaning out your pantry before heading north for the summer, please drop off your non-perishable foods at the Homeless Family Center. The Center  food drivehelps families who  have had to make difficult choices between housing, medical care, transportation, food, and other expenses that may lead to them being without a home. In addition to food, the Center welcomes donations of diapers, toiletry items, cleaning and paper supplies, pillows, sheets and blankets, etc.  The Center is located at 720 4th St. Please drop off your items any day between 8 a.m. and 8 p.m.  Ring the front doorbell for assistance when you arrive.  For more information or to volunteer, call 772-567-1454 or visit their website at www.homelessfamilycenter.com

This hat was worn by Princess Beatrice at the Royal Wedding and she sat right behind Queen Elizabeth!  Princess Beatrice is the 22 year old daughter of Prince Andrew, Duke of York and Sarah, (Fergy) Duchess of York. Princess Beatrice, who is fifth in line for the throne, is rarely seen in public and does not like discussing her life as a princess. 

      

Beatrice has always favored ridiculous hats as you will see in this other picture from an earlier event. Princess Beatrice is currently a student at Newcastle University and according to Us Weekly, she may be the next royal to marry.  Princess Beatrice is currently dating Dave Clark, the son of millionaire Richard Clark of Virgin Airlines.

With the tornadoes in our own country and the recent tragedy in Japan, it's easy for criminals to take advantage of such situations. RECIPE OF THE WEEK
A FEAST FOR CINCO DE MAYO!  
 

                                                  

   MEXICAN LASAGNA 

 

2 pounds of ground beef

4 cups (16 oz) shredded Colby-Monterey Jack Cheese divided.

3 green onions chopped

1 jar (16 oz.) mild salsa

2 Tbsp hot salsa

1 pkg. taco seasoning

1 can (16 oz). refried beans

1 can (4 oz) chopped green chilies

1 envelope taco seasoning

12 oz. uncooked lasagna noodles

2 cups water

2 cups sour cream

1 can (2-1/4 oz) sliced ripe olives, drained

Optional garnish: Frito chip, guacamole and chopped tomatoes  

Brown beef and drain. Stir in beans, chilies, taco seasoning, and hot salsa. In a greased 13 inch x 9 inch baking dish, layer a third of the noodles and meat mixture. Sprinkle with 1 cup of cheese. Repeat layers twice. Combine mild salsa and water; pour over top. Cover and bake at 350 degrees for 1 hour or until heated through. Uncover; top with sour cream, olives, onions, and remaining cheese. Bake 5 minutes longer. Let stand for 10-15 minutes before cutting.

Buggy Bunch "Talented Tots" Mommy & Me Music Playgroup is held the 3rd Tuesday of each month. Children between the ages of 0-18 months meet from 9:00am to 9:30am, 19 months to 3 years meet from 9:45am to 10:15am, and children 3 years to 5 years of age meet from 10:30am to 11:00am.       The Emerson Center Florida Humanities Series, sponsored by Marine Bank & Trust, continues with "Florida's Delicious History: A Gastronomic Journey Through Modern Florida" with Andrew Huse. Andrew Huse is a librarian and historian with interest in oral history, social history, the state of Florida, and culinary history. He has written numerous articles in magazines and academic journals, and has recently completed a centennial history of the Columbia Spanish Restaurant (University Press of Florida, 2009). Huse teaches and speaks on a variety of topics, and is presently at work on a history of Florida's restaurants and food culture. He works at the USF Tampa Library's Special Collections department as a librarian and oral historian. Huse lives in Tampa, where he cooks and writes, sometimes simultaneously.
