MILT  THOMAS

Milt Thomas 

IS A POSITIVE PERSON

The family of Milt Thomas moved to Vero Beach in 1956 when Milt was still a teenager. He attended Vero Beach High School and after graduating he attended FSU. He spent the next 25 years in the music business, returning to Vero in 1987. He started volunteering within days of moving back. Chances are that anyone who is involved in our community has come across Milt Thomas! He has served as Chairman of the Hibiscus Festival since it was re-established in 2004, President or Chairman of the following organizations:  Main Street Vero Beach,  the Public Library Advisory Board,  Kiwanis Club of Vero-Treasure Coast, Junior Achievement of Indian River County and the Chamber of Commerce Tourist Council. He has also served on several boards and volunteered  with Haiti Partners, the Enterprise Zone Development Agency, Friends of the Library, Center for the Arts, Vero Beach Police Retirement Trust Fund and the Florida Bar Grievance Committee for the 19th Judicial Circuit. He has found time to serve as a judge at the County Science Fair and for 18 years he volunteered as an economics teacher at Vero Beach High School! He is also a popular lecturer at churches, schools and libraries on Ancient Egypt and other subjects. WHEW! No wonder he was named the 1998 Volunteer of the Year by the County's Public School System! When asked what motivates him to volunteer, Milt says, "Since coming back to Vero, I have wanted to give back some of what my family and I have received over the years"

 

Milt says he is inspired by his wife Sandy and anyone who is older than he is who is still making a contribution. He enjoys traveling overseas where he indulges in his hobby of photography. He also enjoys music, writing and spending time with his 3 children and 5 grandchildren. In fact, he considers his greatest accomplishment comes when he makes a child smile. Milt's philosophy is that  "you cannot succeed in life without enthusiasm for what you do and who you are".  Thank you, Milt, for those words of wisdom. You are an inspiration to all of us!

CUTE EASTER GIFTS

      
This year Easter will be on April 24th. There may still be time to start these seedlings of herbs or flowers as gifts for friends or your child's teacher.  Use eggshells as pots to start the seeds. Plant seeds according to package instructions, and nestle planters in an egg carton on a sunny windowsill, where they can be watered easily. You can make small identifying signs with wooden skewers. When plants have grown to about 3 inches and have at least two sets of true leaves, they are ready to be transplanted to the garden. (Remove them from the eggshells first.)

Indian River Charter High School freshman Virginia "Jenny" Barefield will be making her debut performance as the soprano soloist in John Rutter's Requiem at the Vero Beach Choral Society's "Songs of Rest and Renewal" concert at Trinity Episcopal Church in Vero Beach, under the artistic direction of Daniel Koh. "She is undoubtedly the most talented middle or upper school singer I've ever worked with," says Koh. During the Sunday matinee, one of the Choral Society's scholarship recipients and Stetson University junior, Emilio Rutllant, will entertain audiences on the flute during the intermission. Rutllant has studied with faculty from  many prestigious institutions including The Juilliard School and The Manhattan School of Music. Audience members can meet the choristers, soloists, instrumentalists and director at receptions following the concerts.

For the first time this year, the HabiTrot will include a Bunny Hop run for the kids 12 and under. Proceeds from the HabiTrot go to support Habitat's Scholarship Program, supporting the children of Habitat homeowners as they pursue higher education. 5K registration: $20 in advance, $25 day of event. While computer games have been shown to improve concentration in kids, too much of a good thing is exactly  that...too much!  According to the American Academy of Pediatrics, over 2 hours of  screen time on any of the above can be harmful to young children, leading to speech delays and obesity. In the older "tween" years over 2 hours can cause psychological problems, including hindering the teen's ability to get along with friends. Explaining this to your children might help them to limit the time spent themselves.

Brickman Family of Vero Beach First to Join Saint Edward's Endowment Initiative

 

Julie and Steven Brickman have established the Julie and Steven Brickman Family Endowed Faculty Chair at Saint Edward's School. Joining them are Sally and Dick Brickman, who will help establish another endowed faculty chair when the School has completed a challenge and raised additional endowment dollars.

 

"Our goal," said Julie "is to provide a significant and sustainable increase in faculty salaries so that Saint Edward's continues to attract and retain the best possible faculty."  "After all Saint Edward's has been through in the last few years," Steve Brickman said, "and after learning that the teachers went years with only minimal salary increases, while continuing to provide the excellence they are known for, we wanted to do this sooner rather than later. Our hope is that our gift will generate interest and awareness from the many other capable families with students at this great school who want to see it thrive for many generations to come."

 

Ultimately the School hopes to leverage the challenge from Sally and Dick Brickman, aided by the excitement generated by the gift from Julie and Steve, to raise an additional $750,000. "A challenge is a superb opportunity for us," cites Storch. "Saint Edward's parents, alumni, and indeed our whole community respond well to a challenge and are very aware that the School's highest priority in the coming years is to build our endowment, first for faculty compensation, and second for student financial aid. These gifts are a crucial first step in achieving our goal."

Roast chicken with Meyer lemon shallot sauce
    

 "Engagement Chicken"

First comes chicken, then comes marriage?  It all began 26 years ago, when a former fashion editor of Glamour Magazine gave the recipe to her assistant,  who made the chicken for her boyfriend, who, a month later, asked her to marry him.  He claimed that's what got him thinking about marriage. The recipe for the simple dish was passed  around and when other proposals occurred, someone dubbed it  "Engagement Chicken". According to Glamour, 72 marriages have occurred so far. Try the recipe, give it to a friend, and oh... and let us know when it works! 

Ingredients:

  • 1 whole chicken (approximately 4 pounds)
  • 1/2 cup fresh lemon juice, plus 3 whole lemons-including 1 sliced for garnish
  • 1 tablespoon kosher or coarse sea salt
  • 1/2 teaspoon freshly ground pepper
  • Fresh herbs for garnish (4 rosemary sprigs, 4 sage sprigs, 8 thyme sprigs, and 1 bunch leaf parsley)
1. Position an oven rack in the upper third of the oven and preheat the oven to 400°F. Remove the giblets from the chicken, wash the chicken inside and out with cold water, then let the chicken drain, cavity down, in a colander for 2 minutes.
2. Pat the chicken dry with paper towels. Place the chicken breast-side down in a medium roasting pan fitted with a rack and pour the lemon juice all over the chicken, both inside and out. Season the chicken all over with salt and pepper inside and out.
3. Prick 2 whole lemons three times each in places with a fork and place them deep inside the cavity. Chicken cavity size may vary, so if one lemon is partly sticking out, that's fine. (Tip: If the lemons are stiff, roll them on the countertop with your palm before pricking to get the juices flowing.)
4. Put the chicken in the oven, lower the oven temperature to 350°F, and roast, uncovered, for 15 minutes.
5. Remove the roasting pan from the oven. Using tongs or two wooden spoons, turn the chicken breast- side up. Insert a meat thermometer in the thigh, and return the chicken to the oven and roast for about 1 hour to 1 hour and 15 minutes or until the meat thermometer reads 180°F and the juices run clear when the thigh is pricked with a fork. Continue roasting if necessary.( Keep in mind that cooking times in different ovens vary; roasting a chicken at 350°F takes approximately 18-20 minutes per pound, plus an additional 15 minutes.)
6. Let the chicken rest for 10 minutes before carving. And here's the secret: Pour the juices from the roasting pan on top of the sliced chicken- this is the "marry me juice." Garnish with fresh herbs and lemon slices. Serves2-4.

 CREDIT vs. DEBIT CARD 

Statistics show that more people are using Debit cards than they did before. In this economy, that's good news because  it means that  they aren't adding to credit card balances, but it's wise to be careful where the Debit card is used.  If, for example, you use a Debit card for a catalog order, the one taking the order may inadvertently add an extra zero. That $40 order could become a $400 order! The money will come directly from your bank account and the error will be much harder to correct than if you had used a Credit card. It's best to only use a debit card when you can actually see the bill before you approve it.

The Dr. Joe Thomas DDS Hibiscus Festival 5k Hibiscus Run will begin the day of activities for the 2011 Hibiscus Festival. The Run will begin at 7:00 a.m. at the Vero Beach Municipal Airport and end in historic Downtown Vero Beach. The entry fee is $25.00 in advance or $30.00 on race day. T-shirts will be available to the first 150 pre-registered runners.
