Jennifer is a Junior at Indian River Charter high School. She is a busy young lady who excels academically, finds time to volunteer, and is planning to have her AA from IRSC by the time she graduates from high school. She is President of the IRCHS Key Club, member of National Honor Society, Yearbook, and Leadership Council. Her involvement continues in the community as well. The Key Club works closely with the Indian River Kiwanis Club and she volunteers with Youth in Action, Habitat for Humanity, the IR Blood Bank, and Missionary Flights International. She enjoys donating her weekends to other organizations that have special projects scheduled. Jennifer truly has a heart of gold and is a seasoned volunteer who has learned the importance of giving back at an early age! She believes that it is important to give back to the community and wisely stated that, "Everybody can make a difference in the lives of people around them. You don't have to travel far to find people who could really use your help."  We couldn't agree with you more Jennifer and we thank you for giving so freely of your time to help others. You are making a difference!

Hibiscus Festival Juried Fine Art Show - April 16

 The Hibiscus Festival Committee is inviting fine artists to set up booths for the Annual Juried Fine Art Show (sponsored by New Vision Eye Care) The show attracts over 15,000 people of all ages. Spaces are 10 x 10 (Electricity not provided) and all tents must be white. Original artwork is to be exhibited, and offerings of the artist's prints, note cards, postcards & small gift items are encouraged.    Booth fee is $50 or 35 for members of the Cultural Council of Indian River County, the Vero Beach Art Club or the Sebastian River Art Club and previous Highwaymen exhibitors. Booth sharing is permitted with each artist paying the full booth fee.  Deadline to participate is March 15, 2011. You will be notified of your acceptance upon receipt of your application.

 IMPORTANT WARNING FOR SENIORS!

We have all heard that we should guard our Social Security numbers to prevent identity theft, but there have been fewer warnings for seniors to also guard they're Medicare cards. Your Medicare number is your Social Security number! A senior is frequently asked for their Medicare card in doctors' offices and pharmacies and a copy is often made. While these places are usually safe, make sure the senior in your family is aware of this and always gets his/her card returned promptly. It's always a good idea for someone to accompany a senior to the doctor's office anyway. A second pair of "ears" can be important in remembering the doctor's diagnosis and instructions. IT'S NOT TOO EARLY TO START THINKING...TAXES!

  • Taxpayers will get an extra three days to file this year. The filing deadline is pushed back because the District of Columbia will observe the Emancipation Day on Friday, April 15th and by law, local holidays in our nation's capital do effect tax deadlines. Your returns must be filed by Monday, April 18th. 
     
  • Tax preparers say one of the main changes this year is the Social Security Tax -- less will now be taken out. "Normally it's 6.2 of your gross income and this year it will be 4.2 percent so that will be more take home pay," she said.
  • Another thing to keep in mind if you file Itemized Deductions -- there will be a delay. You won't be able to file until mid or late February because of changes in the 2010 law. The law passed about two weeks ago and now the IRS is working to fix computers to handle the change. Bottom line is that you'll have to wait for your refund.
  • As you prepare your taxes, beware of email tax scams. Tax experts say the IRS will never email you regarding your funds. And lastly, you may want to try electronic filing.
  • Returns are not due until April, but getting a head start will make the process easier. If your are planning on doing your taxes yourself, check the IRS website for some helpful products, including a tax calendar with important deadlines. To contact the IRS call 1-800-829-1040.

On  January 11, 2011 Google launched the inaugural Google Science Fair. They have partnered with NASA, CERN, National Geographic, Scientific American and the LEGO Group to create a new competition that is more open, accessible and global than ever before. They want to  extend an invitation to schools and teachers to get involved early in what they hope will be a large global initiative.   LOW FAT COTTAGE CHEESE  

                                                    

Today is National Lasagna Day, but not to worry - precooked noodles mean there's no need to heat up your kitchen.

                                                    

PROTEIN POWERHOUSE!

We know how important protein is for our bodies. It not only helps to heal cells, it provides energy, gives us more stamina, and is especially important if you're trying to lose weight. Major sources of protein are meat, eggs and cheese, but unfortunately these also contain a lot of fat. The exception is low fat COTTAGE CHEESE. This creamy dish supplies 12 grams of protein in only 1/2 cup! That's 24 grams in a full cup,...way more than what is found in protein shakes or bars (about 10). Cottage cheese is also very versatile. You can puree it in a blender and use it instead of sour cream or cream cheese (which have less protein) in dips, sauces and other recipes.  Add it to prepared  salad dressings. Mix it with an egg into creamed spinach or creamed corn and bake. It's good added to any pasta dish,  - stuffed shells, lasagna, noodles alfredo, etc. Use it on baked potatoes. Have it for breakfast on a bagel with preserves. Put it in jello with pineapple or other canned fruit. Have as a snack and satisfy a sweet tooth by sprinkling on a little Splenda. In the spirit of the Holidays, Indian River Charter High School students gave back, visiting local elementary schools. Kelly Dixon's Creative Writing classes ended their semester writing and illustrating their very own children's books. In an effort to test their ability of writing to entertain and educate a specific age group, Charter students read to 14 Kindergarten and 1st Grade classes at Imagine School of South Vero and Liberty Magnet.  All the books had lessons touching on topics such as sharing, honesty, bullying, and confronting fears.  "It seemed to be a rewarding experience for everyone involved, " explains Dixon. "Charter students felt uplifted; some even donated their books to classrooms. Students and teachers at both schools were excited and appreciative. We'll happily visit them again."

Five More Awesome Meat Loaf Recipes
 

 COTTAGE CHEESE MEATL0AF 

 

This easy recipe replaces bread crumbs with healthy oatmeal and cottage cheese. 

1 lb. lean ground beef

1 c. (1/2 pt.) low fat cottage cheese

1 egg

1/2 c. quick cooking oatmeal

1/4 c. catsup

1 tbsp. prepared mustard

2 tbsp. chopped onion

3/4 tsp. salt

1/8 tsp. pepper

1/3 c. grated Parmesan cheese

Combine the ground beef with the cottage cheese, egg, oats, catsup, mustard, onion, salt and pepper. Mix the ingredients lightly until well blended. Press the mixture loosely into a shallow baking pan (about 8 inches square).

Bake, uncovered, in a 350 degree oven for 20 minutes. Remove from oven and sprinkle the Parmesan cheese evenly over the top. Return to the oven and continue to bake for 10 minutes longer. Let stand for about 5 minutes before cutting in squares to serve
