Mary Hughes, Inns Magazine


Mary Hughes,began publishing Inns Magazine in 1996. She was surprised to discover there was no publication in Canada to serve the inn industry and decided to concentrate on the Canadian market for the first few years. She then expanded into the U.S. as the popularity of the magazine grew.

"Our magazine focuses on travel, dining and pastimes. From undiscovered gems located in the North American countryside to more urban inns in small villages, everything you need for an exquisite getaway can be found withinour pages. We feature only the most splendid inns, bed and breakfasts, andresorts for restful and romantic hideaways."

Mary incorporated her business under the Harworth Publishing banner, named after her father in 1999. She began publishing Spa Life magazine in 2000. Spa Life magazine is aimed at an audience dedicated to the world of spahing for repose, rejuvenation and new beginnings. Mary and her family recently bought and restored an 1870 Stone coach house in Elora, Ontario. Mary is married to John Westerman and they have two daughters, Paige, age 9 and Sydney, 7 as well as two Schnauzer dogs, Robbie and Oliver. Mary is always looking to buy that perfect B&B!

 

 Recipe of the Month

 

 

Cedar House Coconut Macaroon Cookies

 

 

 
 

Ingredients:

1 package (14 ounces) Baker's Angel Flake Coconut (5 1/3 cups)

2/3 cup sugar

6 tbsp flour

¼ tsp salt

4 egg whites

1 tsp almond extract

Marachino cherries (optional)

Whole almonds (optional)

 

Instructions:

Preheat oven to 325*F. Mix coconut, sugar, flour, and salt in large bowl. Stir in egg whites and almond extract until well blended. Drop by teaspoonfuls onto greased and floured cookie sheets. Press 1 whole candied cherry or whole natural almond into center of each cookie, if desired. Bake 20 minutes or until edges of cookies are golden brown. Immediately remove from cookie sheets. Cool on wire rack.

 

*Makes about 3 dozen cookies

Cleaning Tip of the Month
:
2 Solutions for removing stains and odors
 
1. Stanley Degreaser Concentrate. This product works great on all linens, especially restaurant napkins and tableclothes; removing the grease stains and the nasty grease smell that is picked up just being around foods and cooking.  It is available from your local Stanley representative.  Just google on-line to locate your representative.
 
2. If you keep buttermilk and baking soda on your shelves just make a paste of the two products and apply on any stain.  Let set before washing.  This combination works especially well on wine and blood.
