The key to establishing and maintaining this balance, of course, is returning to a diet rich in real unaltered foods, created by God to nourish our bodies. In addition to real whole foods, fermented foods play an important role in reestablishing the delicate balance of gut organism necessary for good health.
In a healthy gut, the bacteria outnumber the body cells by a factor of 10 to 1. Scientist, through a process of gut mapping, have discovered up to 100 trillion active organisms, representing more than a thousand species, inhabiting our digestive tract. These organisms are involved not only in digesting and processing our food, but also in producing nutrients and compounds in the gut that act as our bodies' first line of defense against disease.
But knowing and understanding the importance of fermented foods, for most of us, may not be enough. The real challenge is incorporating these foods into our families' regular diets. Understanding the value of fermented foods isn't useful unless you can apply it to your life.
Our class on fermented foods is online and has a wealth of information to help you get started. Caleb Becker demonstrates how easy it is to make yogurt and kefir, then uses the kefir to make a fabulous smoothie, incorporating our Phytoberry antioxidant powder (item #08410), that even the pickiest eater will love.

Recipes
Kefir Phyto Berry Smoothie
1 ½ cups kefir
¼ - ½ cups frozen fruit of choice
1 scoop Phytoberry powder
Blend until smooth. Enjoy.
Cultured Whipped Butter
So easy and delicious!
Add one foil packet Veggie Culture to 1 pint of organic cream. (I use a quart canning jar). Shake or whisk together well. Let sit at room temperature for about 24 hours. To make butter, refrigerate the cultured cream for 2-3 days. Whip or "churn" the cold cultured cream into butter using a blender, an electric mixer with a whipping attachment or by vigorously shaking the jar (great energetic kid activity). The cream will go through a couple of stages as it thickens before the butter forms.
This process may take as much as 30 minutes of whipping. If using a mixer, slow the speed down as the butter starts to form to prevent excessive splattering. The milk that separates off is buttermilk and may be used in cooking or to drink. Pour the milk off and collect the butter pressing the excess liquid out with a spatula. Add a little salt as well as garlic and herbs to taste if desired.
1 pint of cream makes ½ pound of butter.
As your family enjoys this wonderful butter on their fresh warm bread they will never know they are getting their daily dose of gut bacteria.
