COMFORT FOODS   

 

What are comfort foods?  I am not sure where the term originated, but what I do know is that for most of us certain foods bring back certain memories.  For comfort foods these would be good memories.  Add a little cool weather and most of us begin to think about cooking some family favorites!

 

With this in mind, we have a great Fall line up of cooking classes introducing you to some new recipes as well as recreating some great classics.

Gluten Free 101

This class will help you gain the confidence and know how to begin making your own gluten free breads and rolls. Join us for a time of baking, sampling, and lots of helpful information. Delicious gluten free foods can be prepared fresh at home for less! Freshly milled gluten free (GF) flours contain all of the naturally occurring fiber and are much more nutritious than prepared bags of GF flour.

Along with GF grains, beans, and ingredients, the Zojirushi bread machine, Magic Mill (Electrolux) Mixer, and three of our cookbooks will be highlighted. The necessary ingredients and supplies are available here for your convenience.

 

 

 

Simply Crepes

No need to be intimidated about making crepes.  They are surprisingly simple to make and the serving possibilities are endless.  From savory to sweet - crepes can turn any simple filling into an elegant meal or desert.  Crepes were traditionally made with buckwheat flour, which can easily be substituted for wheat flour in the recipe, making crepes a freat option for gluten free needs.

Sue will demonstrate making crepes with our new crepe maker, as well as with a traditional frying pan.

Recipes will include:   

  • Chicken and Cheese Filled Crepes with Asparagus Lemon Sauce,
  • Cheese Blintzes with Plum Raspberry Sauce, and
  • Chocolate Crepes Filled with Cream and Strawberries.

Sharon Feskanin brings a gourmet touch to gluten free and allergy free baking.  Former owner of Zander's Healthy Bakery and author of "Mommy and Me Gluten Free", Sharon has learned the art of making delectable treats while avoiding certain ingredients.  Sharon and Sue will be sharing recipes and tips that are gluten free, dairy free, egg free, as well as cooking with spelt.

We will introduce you to the world of milling your own grains and making all your own breads.  We will start from "scratch" and discuss all the necessary baking ingredients and types of wheat and equipment needed to make this lifestyle change not only possible but doable!

We will demonstrate milling flour, mixing quick breads, kneading bread dough, either by hand or machine, shaping the dough, making quick cereals, and even tortillas.

And best of all - you get to taste everything we make!!  We will demonstrate the Wonder Mill, NutriMill, Bosch Kitchen Machine, the Kitchen Assistant, Zojirushi Bread Machine, Tribest Personal Blender, and the ChefPro Tortilla press.

Lots of information presenting the endless possibilities of baking with whole grains.

Recipe

 

Orange Cranberry Pumpkin Muffins 

Variation of the Basic Muffins from
T
he Bread Beckers Recipe Collection

 

What could be more comforting than the great flavors of orange, cranberries, and pumpkin combined into a delicate muffin? 

  • 2 ¼ cup freshly milled flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon Real Salt
  • 1 Tablespoon Pumpkin Pie Spice
  • ¼ cup sucanat (molasses granules, evaporated cane juice)
  • Zest of 1 orange
  • 1 egg
  • ½ cup oil
  • ½ cup honey
  • 1 cup cooked, mashed pumpkin (or canned)
  • Juice of 1 orange plus enough buttermilk to make 1 cup
  • ½ - 1 cup dried cranberries (as desired)

Preheat oven to 400 degrees.

  

In large bowl combine dry ingredients.  Add the rest of the ingredients, except for the cranberries, and stir just until combined.  Gently stir in the cranberries.  Fill prepared muffin cups.  Bake for 15- 20 minutes until done.


Makes about 14-16 regular muffins and about 30 mini muffins.
