Thank you for subscribing to eBread! In this issue, Sue discusses her thoughts on September's Raw Foods Class (including some new products and recipes). We have some great events and classes coming up at The Bread Beckers in November. Sue will be teaching classes about how to get the most out of your pressure cooker, and getting started making your own bread. She will also be speaking at the Okefenokee Country Club in Blackshear, Georgia about Real Bread and how you can incorporate healthy foods into your life.

Cooking Under Pressure

Sue will show you, step-by-step, how to make an entire meal (including dessert) in a pressure cooker.

Sue will discuss wheat, honey, and other bread ingedients, and will demonstrate the equipment you'll need to get started. You will have the opportunity to ask questions and see how to knead and shape dough.

Thoughts on the Raw Foods Class

handWmouseTwo of my favorite ideas I have begun to implement from the raw foods class are the "super-foods shake" and the zucchini pasta. When Tina White first told me about turning ordinary zucchini into angel hair pasta, I must say I was a little skeptical. But after trying the spiral slicer one time, I got excited.

In just a few seconds, our new Spiral Slicer can turn almost any firm vegetable (or fruit) into fine spaghetti like strands or incredibly long thin ribbons with just an easy turn of the handle. The Spiral Slicer can also make beautiful julienne strips as well as perfectly uniform slices. To make "raw angel hair spaghetti" just process a zucchini through the machine and watch long strands of zucchini "pasta" come out. For a totally raw meal, top with a delicious Fresh Tomato Basil Sauce (see recipe below).

Our family is not ready to go all raw, so I just topped the zucchini pasta with our favorite cooked sauce.  It was delicious!
For a really fast treat, top the zucchini pasta with one of the pesto sauces we sell. My favorites are the Sweet Pepper and the Basil Pesto. Makes a great fast lunch. YUM!

Fresh Tomato Basil Sauce

This is a fresh hand-chopped sauce that you put together tasting as you go. Depending on how many tomatoes you start with, you can make as much or as little as you like.
  • Roma tomatoes
  • Sun-dried tomatoes
  • Lemon juice
  • Olive Oil
  • Chopped Parsley
  • Chopped Basil
  • Finely minced onion
  • Garlic
  • Sea Salt
  • Fresh-cracked black pepper, or red pepper
  • Agave Nectar or Raw honey, for sweetening, if desired
Chop and go, mix and taste! This is best when made the night before or early in the day and then allowed to sit out at room temperature most of the day.

Eat as is ... or serve over spiralized zucchini or summer squash or kelp noodles.



Raw Super Foods Shake
Again I was skeptical of promoting foods that were out of the ordinary, but after doing my homework on the nutritional benefits (see below) of each of the super foods in this shake, this super foods shake is now part of my daily routine. I drink a variation of the Raw Super Foods Shake every morning. I noticed an incredible increase in energy right away. The Bread Beckers now carries all of the super foods for this shake except the raw cashews and the Ho Shou Wu (to order, see below). Each of the super foods comes in a one pound package. One pound contains about 50-60 Tablespoons, so it will last for quite a while.

Basic Super Foods Shake Recipe
  • 1 tsp. raw organic lacuma powder
  • 1 tsp. raw organic maca powder
  • 1 Tbs. raw organic cacao powder (or powdered cacao nibs)
  • 2 Ho Shou Wu capsules (open and empty into drink)
  • Squirt of Agave nectar to taste
  • Squirt of Yacon Syrup to taste
  • 1 cup of water
  • 1 cup of ice cubes
  • Handful of raw cashews
Grind cashews (and nibs if using) in blender. Add the rest of the ingredients and enjoy. If you use the cacao powder it tastes like a frosty from Wendy's or a mocha iced coffee. The nibs do not totally powder so they do not lend much of a chocolate flavor.

Since I have access to raw milk and do not have a milk allergy I use about 1 cup of milk in place of the nuts and water. You could of course use any milk substitute as well. I also do not use the cacao. Even though it is rich in anti-oxidants and minerals, it does have caffeine. See below for details on the benefits of the Super Foods.

Raw Super Foods:

Lucuma (pronounced "loo-ku-mah") is an exotic Peruvian fruit known as the "Gold of the Incas." Lucuma is low in acid, low in sugar and is an excellent source of carbohydrates, fiber, vitamins, and minerals. It is especially abundant in beta-carotene (precursor of vitamin A), niacin (vitamin B3), and iron, with significant amounts of calcium and phosphorous. Lucuma is one of the lost crops of the Incas and its remarkable nutritional value and exotic flavor make it worth recognizing and appreciating.

Maca is a vegetable root, related to the potato family, which grows only in the high Andean plateaus of Peru. Maca is an adaptogen - it adapts to your body's metabolism. It works with your body to repair what needs to be repaired. It is full of vitamins and minerals in the right combination and proportion that your body needs, so that your body can actually use them. Maca is a protein rich food containing at least 18 different amino acids. It is an incredibly rich source of very absorbable calcium.

Maca is best know for its nourishing benefits to the entire endocrine system and its effectiveness in such health challenges as osteoporosis, male impotence, menopause, menstrual difficulties, chronic fatigue, and depression. It does not contain natural hormones but so nourishes the body to help restore proper hormone production in both men and women.


Since Maca is a food, it is a non toxic energetic supplement with no downside effects.  It enhances overall energy.  In women it encourages the normal production of estrogen, progesterone and testosterone therefore promoting natural hormone rejuvenation. It may eliminate hot flashes and other menopausal symptoms and reduce morning sickness in pregnant women.  You may use from 1 tsp - 2 Tbsp per day. Start with 1 tsp per day for about a week. Increase if you feel you need more.  Remember it is a food so more won't hurt you it just may be a waste if you do not need that much.

Cacao  (nibs or powder) is raw chocolate.  Raw chocolate is indeed high in antioxidants and rich in minerals, especially sulfur and magnesium. It is also high in fiber. Yacon Syrup is a plant based raw sweetener with a flavor similar to molasses. It is considered a prebiotic, therefore is an aid to digestion and helps with the absorption of calcium and vitamins. Ho Shou Wu is a member of the buckwheat family and is a rich source of bioflavonoids that help protect and maintain blood vessel health. It has anti inflammatory properties as well as antihistamine action, making it helpful for allergies, asthma and overall respiratory health. It has long been used in Chinese medicine as a liver and kidney tonic. Liver and kidney weakness may sometimes manifest as symptoms such as hair loss and premature graying of hair.

The Chinese meaning of Ho Shou Wu is "head full of black hair." It has been known to reverse premature graying of hair. Ho Shou Wu, also known as Fo Ti, supports the immune system and blood vessel health. It is a digestive tonic, rejuvenator and increases stamina and endurance
