How to ... Make Bread Tuesday, October 10, 2007 10 am - Noon
Taught by Denise Rogers Many
customers feel overwhelmed by the amount of information presented at
our Getting Started class. With these customers in mind, we have
created a special How To" class focusing on bread only. Our goal is to
keep it simple in order to allow time for in-depth demonstrations and
any questions you may have about baking bread. Learn the ins and
outs of kneading dough, including what the dough looks and feels like
when it is ready to rise. Get tips and advice from a baking veteran, and
watch how to shape dough into loaves and dinner rolls. This How to Make
Bread class is a great opportunity to see how to use equipment such as
the Electrolux Assistent (DLX) and the WonderMill. Click Here to Register

Meet Our Coordinators
Tina White, New Port Richey, FLTina White has been a Bread Becker co-op coordinator for 5 years. She lives in New Port Richey, Florida with her husband Jesse and two sons, 11 and 14. What does Tina enjoy about her co-op? "Teaching has to be the number one reason I co-op," she says. "Getting people their grain is one thing, but teaching them how to make edible items their families will love is my passion!" Tina taught two Raw Foods classes (at the Bread Beckers in September) to a full house. She will be teaching another Raw Foods class in New Port Richey, Florida (see class information below). After hearing a CD by Serene Allison (www.aboverubies.org) several years ago, Tina became interested in raw foods. "I recommended it for one of my clients who was having digestive issues, and watched her body begin to heal itself," says Tina. "From that time forth, I was completely sold."

Tina also has personal reasons for choosing whole grains. When her son was diagnosed with ADHD at the age of 5, Tina and her husband looked to better nutrition for answers. "We discovered that processed bread conflicted with his system and began using 'real' bread. His ability to concentrate in school greatly improved." She says that many of her clients have also experienced the benefits of whole grains, such as the disappearance of warts and better digestive health. Experimenting with recipes to use in her cooking classes has become a favorite pastime of Tina's. She says she could spend hours on the Internet and in the kitchen, and loves "every minute of it."Raw Foods Class October 13, 2007 10 am - 4 pm 4719 Vorhees Rd. New Port Richey, 34653 Tina will be teaching another Raw Foods class, this time a little closer to home. The turnout in Georgia was great: "The class was completely packed with a waiting list of 150," says Tina. Each class covered six recipes, discussing the healing properties of the foods as well as their culinary purpose. For many of us it is easy to compliment the main dish we are serving with a raw fruit or vegetable; but wouldn't it be nice to serve a tasty raw main dish? What about desserts? Even the most health conscious of us compromise when it comes to desserts. What if you could make desserts that were not only great tasting, but good for you and made with raw foods as well; desserts that would not make you gain weight but lose weight? Desserts that you do not have to feel guilty about eating and could even enjoy for breakfast? Imagine satisfying that chocolate craving with a raw chocolate pudding or raw fudge and lose weight in the process! Tina will demonstrate and serve (all raw) Thom Ka Thai Soup, Angel Hair Zucchini with marinara sauce, unsteak fajitas, coconut cream pie, chocolate pudding, candy bars, and apple cobbler. She will also serve a "better than coffee" shake made with all superfoods! Since baking temperatures destroy the enzymes in raw foods, Tina will demonstrate how to make Vegetable Flax Crackers in the dehydrator. She will also make Marinated Kale Chips, Raw Oatmeal Cookies, Pesto Stuffed Mushrooms, and veggie flax crackers- all using the dehydrator If you are planning to come to attend her Florida class, don't delay! Chocolate Satin Featured Recipe
Think avacados are just for guacamole? Think again! This recipe from
Tina White will surprise you, and delight your taste buds.
-2 avocados -2 TBS coconut cream concentrate -1/2 to 3/4 cup agave nectar -1/4 cup cacao powder -1 TBS vanilla -1 pinch sea salt
Combine in a blender and hide from your kids.

Sweet Confusion Sucanat vs. Sucanat with Honey
One of the most common questions asked at our conventions and shows is,
"What's the difference between Sucanat and Sucanat with Honey?" And
just when everyone was getting the hang of it, the names changed. So
here's the skinny on Sucanat.
Sucanat is dehydrated cane juice. It is not refined or bleached. It
contains molasses, and therefore has a strong flavor most would compare
to brown sugar. Sucanat with Honey is a milder version of Sucanat.
During the processing, honey is added to the cane juice. It is lighter
in color as well as flavor. About two years ago the names
changed, but the products did not. Sucanat is now called "Savannah Gold
Molasses Crystals," and Sucanat with Honey is "Savannah Gold Honey
Crystals." Molasses Crystals can be used whenever a recipe calls for
brown sugar. Honey Crystals can replace refined white sugar in any
recipe. But forgive us if we still use the terms "Sucanat" and "Sucanat with Honey" in our recipes. Old habits are hard to break.

are a great way to get your grains and other supplies that are just too
expensive to ship any other way. Current co-op shipping rates range
from 9 cents to 11 cents per pound (depending on distance from our
warehouse) when we deliver on our own truck, compared to UPS rates that
can be around 50 cents a pound! Visit our website and find the co-op closest to you, our coordinators will be happy to welcome you into a co-op!
