RAW FOODS CLASS - Main Dishes & Desserts

Tina White from Newport Richey, FL is coming to share with us her excitement and knowledge of making raw foods that not only taste good but are good for you.  Tina shares our convictions that bread should be the mainstay of our diets, while embracing the idea that we all need to be eating more raw foods.

For many of us it is easy to compliment the main dish we are serving with a raw fruit or vegetable; but, wouldn't it be nice to serve a tasty raw main dish? What about desserts?  Even the most health conscious of us compromise when it comes to desserts.  What if you could make desserts that were not only great tasting but good for you and made with raw foods as well; desserts that would not make you gain weight but lose weight?  Desserts that you do not have to feel guilty about eating and could even enjoy for breakfast?  Imagine satisfying that chocolate craving with a raw chocolate pudding or raw fudge and lose weight in the process!!!  Tina will demonstrate and serve - all raw - Green and Sunny Fettuccini, Angel Hair Zucchini with marinara sauce, coconut cream pie, banana ice cream, chocolate pudding, fudge, and peach cobbler.  She will also serve a "better than coffee" shake made with all superfoods!


RAW FOODS CLASS - Dehydration

Since baking temperatures destroy the enzymes in raw foods Tina will demonstrate how to make Vegetable Flax Crackers in the dehydrator.  She will also make Marinated Kale Chips, Raw Oatmeal Cookies, Pesto Stuffed Mushrooms, Raw Pizza, and "Unsteak" Fajitas - all using the dehydrator.

 
When you register for the RAW FOODS CLASSES please indicate whether you will be attending either one or both of the classes.


OPTIONAL CATERED LUNCH ON SATURDAY SEPT 15, 2007

As an added treat, The Real Bread Company will cater lunch during the break between classes and will include a Turkey Sandwich, with lettuce and tomato on freshly milled whole grain bread (of course), a bag of natural chips, a chocolate chip cookie or oatmeal craisin cookie (made with freshly ground whole wheat of course!) and an organic green tea soda or water. 

The lunch is $7.00, available ONLY if you pre-order when  registering for one or both, of the RAW FOODS classes.  You may pay for lunch at the door when you check in; but, you do have to pre-order so we will know how many lunches to prepare!

We cover easy ways to make your own baby food. Some things covered will be from the "Super Baby Food" book by Ruth Yaron. If you don't already have this book you can pick it up the night of the class here in our store.

AGAVE NECTAR

Raw, Organic Agave Nectar (MADHAVA Brand)- This is a great tasting, all natural, liquid sweetener made from the extract of the wild agave plant.  Agave Nectar is suitable for any sweetening use and has both organic and kosher certifications.  We have chosen to carry only the raw variety assuring that the nectar has not been heated above 1150.  We have it in 3 sizes:

While honey has no equal, agave nectar is a wonderful addition as an alternative sweetener with different characteristics than honey.  

  • It has a neutral, very sweet flavor and will not alter the taste of the foods in which it is used, making it an ideal sweetener for mild flavored foods and drinks such as tea, lemon/limeade, fruit smoothies, and other beverages as well as yogurt and cheesecake.  
  • This new sweetener is less viscous than honey, making it easier to use and pour, even when cold.  It dissolves easily and never hardens even in cold beverages or on fresh or frozen fruit.  It blends and dissolves readily in or on all foods. 
  • It substitutes in recipes just like honey - use ¼ to ½ cup of agave nectar for every cup of sugar called for in a recipe.
  • It has a long and stable shelf life, and will not solidify.
  • In addition to agave nectar's very mild, sweet taste it has a very low glycemic index.  
The glycemic index is a relatively new concept, but an important one from a metabolic standpoint, especially to diabetics, athletes and obese individuals.  The glycemic index is a value assigned to foods that indicates how much your blood sugar increases in 2-3 hours after consuming that specific food.  Since all carbohydrates are converted to glucose in the body, glucose was assigned a glycemic index value of 100.  The higher the glycemic index of a food the faster is raises your blood sugar levels.  Foods with a glycemic index close to or above 100 may present some significant health issues for diabetics in particular.  The predominate sugar in agave nectar is fructose which is more slowly assimilated than other sugars, therefore giving agave nectar a lower glycemic index than other sweeteners, even honey (sage and tupelo varieties may be an exception since the predominate sugar in these honeys is fructose (levulose) as well).  Naturally sweet fruits and vegetables have low glycemic indexes, such as apples at 54 and peas at 32.  Processed foods on the other hand have high indexes, with white bread at 112, corn flakes at 119, and white rice at 83.  The glycemic index for honey is low at 57-60 but agave nectar is lower still at only 27-32.  This mild sweetener could be a wonderful substitute for diabetics who likely use dangerous artificial sweeteners, particularly in beverages.

We love using agave nectar to sweeten frozen strawberries and whipped cream.  It did not harden on the strawberries and added no flavor, just sweetened the whipping cream!  We use it to sweeten fresh squeezed limeade and our family likes it better than when sweetened with honey or even with the Savannah Gold Honey Crystals (sucanat with honey); again it is sweeter and adds no flavor.  We have only begun to experiment with agave nectar, but we are already excited about its many possibilities!

Honey has no equal in that it is the perfect sweetener given to us by God.  It will always be our preferred sweetener.  But agave nectar is fast becoming our second choice!!  Once you try it you will love its mild sweet flavor!!

 
RECIPES
Mango Smoothie
  • 1 - 32oz container of plain yogurt
  • 1 fresh mango (peeled and removed from seed)
  • ½ cup agave nectar
  • 12 or more large ice cubes

 
Blend and enjoy!!

This makes a lot, so I like to blend the yogurt, mango, and agave nectar in a large blender or food processor and refrigerate.  Then when I want a smoothie, I put about 1-1 ½ cups of the mixture in my Tribest Personal Blender (16 oz cup) and add ice to make it as icy as I want.  A lot of ice will make it like ice cream!!!  My kids love this one!


Fresh Squeezed Limeade
  • 1 1/3 cups lime juice
  • 1 ½ cups agave nectar (or more or less to taste)

 Combine and add water to make 1 gallon.

Co-ops are a great way to get your grains and other supplies that are just too expensive to ship any other way.  Current co-op shipping rates range from 9 cents to 11 cents per pound (depending on distance from our warehouse) when we deliver on our own truck, compared to UPS rates that can be around 50 cents a pound!  Visit our website and find the co-op closest to you, our coordinators will be happy to welcome you into  a co-op!
