Starting Sunday April 26th, renowned Harpers Restaurant Group Executive Chef Tom Condron and Upstream's Chef de Cuisine, Scott Wallen will begin a series of cooking classes at the Wine Shop at Foxcroft. Many of you are familiar with the highly successful Saturday classes that Tom has been conducting first at Mimosa Grille and later at Upstream. I'm not sure which better, the first hour's demo class of getting to eat the results the latter half? In either case the classes promise to be terrific. As you would expect each class will have a particular theme and the staff here at the Wine Shop at Foxcroft will pair some exciting wine selections with each course that Tom and Scott prepare. The cost per person for each class will be $45.00 This promises to be a great on-going event for us and an exciting way to spend a Sunday afternoon. Wine Classes on Sundays Starting May 17th 2008 1:00 -3:00pm
Instructor: Ian Coyne, Certified Sommelier We know there's a lot of information floating out there in cyberspace and a lot of people trying to get your attention but we've had numerous request to provide a platform where you guys could learn more detailed information about wine. We're open seven days a week at The Wine Shop and we thought Sunday afternoons would be a great time for this. We also know that it's hard to commit to a long six to seven week program so we've broken our classes up into an a la carte fashion. This way there's time to focus in detail on a particular country's wine regions but not so long that the class conflicts with the other commitments in your lives. No one knows wine better than our staff and we're excited to be sharing that knowledge with you. With this format you can choose to focus on one country or more. The choice is yours. We'll be tasting some really great wines and light hors d' oeuvres will be provided. Seating is limited so call early to make your reservations...  Sir Ian Coyne, Certified Sommelier Nominated for fourteen Emmies (not really) and called America's Funniest Wine Geek by Conrad Hunter, Ian Coyne has over 15 years experience in the hospitality industry. As a sommelier, he has worked at Cassique restaurant on Kiawah Island, S.C and Doonbeg Golf Club in Ireland. While "critiquing" the pub fare in Ireland, Ian ran into a lot of pints of Guinness and a lot of great food and wine experiences that helped that to feed his passion for food and the drink. Ian's restaurant management experience includes prestigious establishments such as the Harbour Club in Charleston, S.C. and The River House at Palmetto Bluff, in Bluffton, S.C. At both locations he left a knowledgeable wine staff and a healthy bar tab. Join Ian, while we discuss the key points to the major wine regions of Italy and France. P.S. Tonight's Rhone Valley Wine Dinner has sold out we're delighted to tell you. The dinners are beginning to take a life of their own and I for one think they're a cut above many of the other events that are going on out there, even if it is my shop. The wines are unique and offer top quality and the Chris Zion's food is second to none. I don't think I need to tell you that it's the best deal in town as far as I can tell. From your overwhelming response it would appear you agree. We thank you for your support. Look for more great wine dinners to come throughout the rest of the year.
The Mother's Day Brunch is filling up fast. We're also kicking off a new series of wine classes where we'll be going into an in depth exploration of the Worlds great wine producing regions. This won't be a drive by wine class but a real detailed look at each country or wine producing region. At The Wine Shop at Foxcroft we're working hard for you, adding new exciting reasons to visit us every week. We've got so much going on This week that I haven't had a lot of time to find new things to make fun off. I still have Mundy fever. ( He even friended me of MySpace) I think you need to purchase one of his albums. I'm really getting into the "24 Star Hotel" right now. I just picked up a copy. As you all know by now, our first wine dinner at the Shop was a huge success in terms of attendance (we sold out) and in terms of the quality of food coming out of the kitchen. For our second in a series of wine dinners we'd like to showcase the food and wine of the Southern Rhone Valley. This is right down Chris's alley as he apprenticed in the Rhone Valley while earning his culinary degree. And as far as wine production goes, everyone knows that Rhone wines second to none. We've chosen some real doozies! It going to be fantastic and where can you have a meal like this for such a reasonable price??? I truly think we've got something special going on here. Not much wine escapes the Alpine fastnesses of Savoie, as most of the region's production is slurped up in situ by vacationing Europeans. We've scored a good supply of this crisp and refreshing white for you, though. The grape is Jacquere, usually responsible for less-than-notable dry quaffers; here it blossoms with bright apple and lemon fruit. Pair this with a spring salad or some simply prepared shrimp with lemon-butter sauce. This is also the region where fondue is king, and the crispness of Giachino Abymes, not surprisingly, will pose an excellent counterpoint to a rich cheese, whether it be molten or solid. (On a further note, take a glass of this out to sip while you pull up monkey grass in your flower beds; I have first-hand proof that it's an excellent accompaniment to weeding -- just be careful with the garden shears, I also have first-hand experience with this... Your next white for Spring hails from the Cotes du Ventoux, at the southeastern edge of the Rhone Valley and is from the second label of Raphael Trouiller, of Domaine de Cascavel fame. Join the growing throng of rose drinkers who have learned that pink wine is not always sweet (rarely, even, provided it's not White Zinfandel from California), but IS nearly always the most food-versatile wine on the dinner table. This is also drink-while-grilling wine, drink-by-the-side-of-the-pool wine, and drink-while-gardening wine. So, once you've got your meat of the grill (not forgetting your friend, Castano Rosado, while slaving over said grill), bring this food-friendly red from the south of France to the table. Equal parts Grenache and Carignane, grown on the distinctive schistous soils of the Roussillon, Cuvee Constance has very good structure on the finish, but enough earth and fruit on the palate to yield a balanced wine. The dark, slightly dried-fruit aromas and flavors are common in the wines of this hot region. (Conrad - Holy cow, this guy actually makes a wine that I can afford to drink during the week? I've never seen his name on anything less than $40.00. Do you guys think that Facebook is starting to influence my thought processes?)

From similar soils to the Calvet-Thunevin, this blend of 60% Grenache, 30% Syrah, and 10% Carignane offers plenty of cocoa and red berry aromas.
