White Ale and Black IPA

India Pale Ale or "IPA" is a style of beer within the broader category of Pale Ale. It was originally brewed in England in the 18th century and for some time was referred to as "Pale Ale prepared for India", "India Ale", "Pale India Ale" or "Pale Export India Ale". The beer was higher in alcohol and more aggressively hopped to help preserve the beer for the long export process. "American IPA" is considered by some to be a distinctly different style and features more of a focus on hop flavor and aroma as opposed to the English style's balance of malt and bitterness (think rock and roll vs. chamber music). The Cascadian Dark Ale, "CDA" or "Black IPA" is a relatively new variant of IPA, with a characteristically dark or black appearance due to the use of darker roasted malts, while retaining the hop flavor and aroma typical of an American IPA. While the name Cascadian Dark Ale refers to the Pacific North West it was actually pioneered by the late Greg Noonan in Vermont in the early 1990s.

Witbier, White Beer (French: la Biere Blanche), or simply 'Witte' is a barley and wheat, top-fermented ale traditionally brewed mainly in Belgium, although there are also examples from the Netherlands and elsewhere. It gets its name due to suspended yeast and proteins from unmalted wheat and/or oats which cause the beer to look hazy, or white. It is a descendant of medieval beers brewed before the extensive use of hops, but instead flavored with a blend of spices and plants referred to as "gruit". Modern versions still use gruit, usually including coriander, curaco, sweet orange peel, or chamomile, but in restrained quantities. Most of the bittering is provided by low alpha acid hops with the gruit being used to accentuate the fruity characteristics of Belgian yeast strains. The taste is therefore minimally hoppy, slightly fruity and spicy, and very refreshing.
