| Greetings!
This month we've been working on a booking system so that our clients can book an appointment with their chosen nutritional therapist very easily through our website. We're trialling this at the moment and are hoping to have it up and running within the next month - we'll keep you posted...
August is usually a very sunny month and in this warm weather we are tending to eat plenty of salads so we thought it appropriate to put some wonderful salad dressing recipes on this month's newsletter, you'll be surprised at how easy it is to make your own dressing and, of course, they taste absolutely delicious! When you try these recipes we would really appreciate your feedback. 'Good to Know...' Garlic | |
Garlic
Garlic is one of the oldest medicinal foods on the planet. Related to the onion and the shallot, garlic is cholesterol lowering, reduces blood clotting, helps to keep blood pressure lowered, fights infections, boosts immunity, is anti -fungal, anti-microbial, anti-viral, and anti-parasitic as well as being a potent antioxidant.
Garlic is accepted even by conventional medicine as an agent for lowering cholesterol. It lowers LDL (bad) cholesterol and raises HDL (good) cholesterol. Allicin, one of the active compounds, has anti-platelet activity which means that it helps to prevent platelets in the blood from sticking together. Garlic can help the common cold by boosting the immune system. It has a positive effect on blood pressure.
Compounds in garlic have been shown in laboratory studies to be chemo-protective and garlic's anti-cancer properties have been reported in the Journal of Nutrition.
The latest scientific research tells us that slicing, chopping, mincing or pressing garlic before cooking will enhance health promoting properties of garlic, in order to ensure the maximum synthesis of allicin, the active compound, let the garlic sit for 5-10 minutes after cutting. This compound is destroyed in microwaving. It is best to cook lightly before eating, or eat it raw, in order for your body to maximise its amazing health benefits.

Garlic Salad Dressings
Pinenut, Basil and Balsamic Dressing. Great on an Italian style salad with baby plum tomatoes and olives. ½ clove of garlic, peeled and mashed in a pestle and mortar
1 handful of fresh basil, mashed in a pestle and mortar 1 handful of pinenuts, mashed in a pestle and mortar 6 tablespoons of olive oil 3 tablespoons of balsamic vinegar Sea salt and ground black pepper Mix all of the ingredients together and pour over a salad. Store any left over in a jar (an old jam jar would do) in the fridge. Mustard Dressing. Great on a nicoise salad with green beans and a nice organic egg served with salmon or tuna. 3 tablespoons of extra virgin olive oil 1 tablespoon of freshly squeezed lemon juice ½ teaspoon of Dijon mustard 1 clove of garlic, crushed Mix all of the ingredients together and pour over a salad. As before, store any left over in a glass jar in the fridge.
