This month, being the month of Easter, we thought it would be good to do our 'Good To Know' feature on eggs.

This month we started our competition to find an original healthy recipe that we can put onto our website. The winner will not only be credited on the recipe when it is printed on the website but will also receive a free consultation with Debi-Ann Wrigglesworth Dip CNM MFNTP at either the Tamworth or Mere Green clinic, whichever is most convenient to the winner.

'Good to Know...' Eggs. |

Eggs.
The egg has long been a symbol of fertility and rebirth and spring is traditionally the time of year when hens begin laying plenty of eggs, hence the egg being a symbol of Easter especially as Easter falls in the spring, the season for renewal, when the earth renewing itself after the cold winter. Long, hard winters historically meant that there was little food and a fresh egg for Easter was quite a gift, it is also known that Christians traditionally abstain from eating meat and eggs during the Lenten season meaning that Easter was the first chance to enjoy eggs after a long abstinence.
Eggs are crammed full of goodness, containing good quantities of vitamin K and all of the B vitamins including vitamin B12, vitamin D, selenium and eggs are one of the best bio-available sources of protein that we as humans can eat, this means that the protein in eggs has the highest quality of protein that is digestible and absorbable by the human body. The protein content in an egg is much more bio-available than any meat or fish product that we consume. If hens have been fed a diet rich in omega-3 then their eggs will contain omega-3 as well - these eggs are usually labelled as containing omega-3.
A lot has been written about eggs and cholesterol with those that have high cholesterol levels being advised to avoid eating eggs altogether, however, several recent studies have shown that eggs lower the risk of heart disease not contribute to it. The results highlighted the fact that it is saturated fat in the diet that influences blood cholesterol levels not dietary cholesterol.
So as the slogan says eggs are 'fast food and good for you'! Cook up a scrambled egg in the morning for breakfast, or later for lunch, with some wonderful wholegrain bread, or a lovely omelette with some fresh seasonal vegetables in, and what child can resist boiled egg and soldiers? Protein is required for growth and repair in our bodies so all that great protein is excellent for children as they are growing up. Eggs are great to have if you are managing your weight as they provide a feeling of satiety - an egg for breakfast will keep you feeling full until lunch time negating the need to snack mid-morning.
We would recommend that you always buy free-range and preferably organic as they taste much better and have a better nutrient composition.

Easy Brunch
Ingredients
Serves 2

1 tablespoon extra virgin olive oil
-
1 small onion, finely chopped
-
200g spinach
-
2 medium sized tomatoes, diced
-
2 medium eggs
1. Heat the oven to 300°f/150°c/gas mark 2.
2. Heat the oil in a shallow pan, add the onion and sweat until soft.
3. Add the spinach and cook until it is wilted. Remove from the heat and and sieve, or spin in a salad spinner, to remove any excess liquid then divide the mixture between 2 terracotta dishes or similar that can go into the oven and then onto the table.
4. Sprinkle the tomatoes over the top and put them into the oven. This will keep the dish warm, and warm the tomatoes at the same time.
5. Meanwhile put 3-4cm water into a small saucepan and when it starts to bubble lightly stir the water gently and crack an egg into it. Leave the egg to cook with the water still bubbling lightly until it is cooked to your liking (2-3 minutes is usually enough).
6. Remove the spinach mixture from the oven, place your poached egg on top and serve with wholemeal seeded bread
