Welcome to the February 2010 edition of the Nutrition Mission newsletter.
 
The month of February is synonymous with Valentine's Day so this issue of Nutrition Mission's newsletter is all about heart health. Looking after our heart is so important to our health so this month we decided to focus on keeping it, and therefore you, healthy.

We are very busy at Nutrition Mission trying to get lots of information together for our website which is being launched on Monday 15th February 2010, and we're very excited about it! Diseases of the cardio-vascular system cause approximately 2 thirds of all deaths in our western culture. Much evidence in the past decade has implicated lifestyle choices as major contributing factors to the disease process. Lifestyle's that include: cigarette smoking, excess intake of salt, a diet high in saturated fats and refined processed foods, alcohol, lack of exercise, pesticide exposure, drinking soft water and low fibre diets have all been shown to potentiate the disease process.

It is never too early or too late to love your heart, you can make a difference on a daily basis by:
 
  • Increasing your intake of fish oils with a good quality fish oil supplement, or eating fish such as mackerel, herring, tuna, sardines, salmon and trout. 
  • Not using hydrogenated vegetable oils or margarine.
  • Reducing your intake of salt to less than 2-3 grams per day.
  • Drinking at least 2 litres of filtered water per day.
  • Increasing your consumption of potassium, magnesium, selenium, calcium and chromium rich foods such as; avocados, sardines, vegetables, cashews, garlic, tuna, mushrooms, eggs and almonds.
  • Reducing your alcohol intake.
  • Increasing the amount of aerobic exercise you take to 40 minutes 3 times weekly.
  • Reducing weight if you are over-weight.
  • Increasing your consumption of carrots, grapes, garlic, salmon, broccoli, nuts, cantaloupe, lima beans and soybeans; each of these foods reduce the risk of cardio vascular disease.
     
 
Recipe of the month...
 

Stuffed Chicken
CHICKEN BREASTS STUFFED WITH OLIVES, SAGE AND WALNUTS






Ingredients
 

  • 4 organic or free range chicken breasts, skinless and boneless
  • 150g (5 ½ oz) Kalamata olives, pitted
  • 1 garlic clove
  • 15g (1/2 oz) fresh sage leaves
  • 100g (4oz) walnut halves
  • 4 tbsp mild or medium (not extra virgin) olive oil plus a little extra
  • Freshly ground black pepper
  
1.     Preheat the oven to 180°C/350°F/gas mark 4.   Rub a little olive oil over the base of a roasting tin.

2.     Carefully cut a slit in the side of each chicken breast to create a pocket.

3.     Blend, or finely chop and mix together the olives, garlic, sage, walnuts and oil until fairly smooth.

4.     Stuff each chicken breast with the olive mixture.   Rub the excess over the top of each chicken breast and place them in the roasting tin.

5.     Put the roasting tin on a baking tray and cook for around 20-25 minutes or until the meat juices run clear.   Sprinkle with black pepper before serving.
 
 
Gluten free, wheat free, dairy free

Can be made in advance - the chicken can be stuffed and kept in the fridge or cooked and served cold.
