Mind, Body and Spirit Show in Coventry on Sunday 4th October 2009
Show1Nutrition Mission decided to have a stall at the Mind, Body and Spirit Show in Coventry on Sunday and what a time we had!
 
Jo Gamble is practising in Coventry and she and Debi-Ann Wrigglesworth decided to do the show so that they could chat to people in that area to see how well received their services would be - the response was great..! Armed with 6 of our Gorgeous Organic Country Apple cakes thinking that may be over-doing it a bit - they ended up having to send out for an emergency supply! Huge thanks are due to Karen Spafford who saved the day and cooked another 3 - good job too as 2 of those were eaten and the show was only open between 10am and 4.30pm!
 
Chatting to so many lovely people made the day and many asked to be kept up to date with what Nutrition Mission are up to; there were also a few people with health issues that would like to see Jo at her clinic at The Healthy Practice, 131 Sutton Avenue, Eastern Green, Coventry, CV5 7ER.

Ian from Nutrition Mission went along and took some photographs of the ladies being very busy in their Nutrition Mission shirts....

'Good to Know...'  Some facts about Spinach.
Spinach

Spinach
       

  • Spinach is a very nutrient dense vegetable providing a variety of vitamins, minerals and other compounds.
  • As a source of calcium it is an excellent alternative to dairy.
  • Its vitamin K content aids the absorbtion of the necessary vitamins and minerals into our bones which is crucial for strong bones.
  • It contains a poweful anti-inflammatory compound called quercetin. This is one of at least 13 compounds in spinach, known as flavanoids that function both as antioxidants and anti-cancer agents.
  • Spinach is a great source of vitamins A and C, These have anti-oxidant properties that help prevent cholesterol from being oxidised. Oxidised cholesterol is the kind that can stick to, and build up in, blood vessels which can cause heart attacks and strokes.
  • It is a great source of folic acid (vitamin B9) which is commonly known for being vital for pregnant mothers. Lesser known is the fact that it is also essential to reduce levels of a dangerous chemical in the body called homocysteine which is harmful, not just to our blood vessels it also puts us at risk of heart attacks, strokes and dementia.
  • Spinach is loaded with magnesium. This mineral has lots of roles in the body including helping to lower blood pressure and therefore protect us from heart disease.
  • It is a useful source of iron and essential for women of menstruating age who can be prone to iron deficiency anaemia.

Recipe of the month...
Curried Lentils


Lentil And Squash Curry


Serves 4








Ingredients
 
1 tbsp mild or medium (not extra virgin) olive oil
2 red onions, chopped
4 garlic cloves, crushed
1 medium butternut squash, peeled, deseeded and cubed
2 tbsp curry powder
600ml (1pt) vegetable stock
100g (4oz) dried split red lentils, rinsed and drained
400g can chopped tomatoes
4 tbsp baby leaf spinach
2 tsp sea salt
Freshly ground black pepper
Handful of coriander, finely chopped
 
 
1. Heat the oil in a saucepan and gently sweat the onion and garlic for around 5 minutes to soften them.

2. Stir in the butternut squash and curry powder, then pour in the stock, lentils and tomatoes, and bring to the boil.   Cover and simmer for around an hour, stirring occasionally, to let the squash soften and the sauce reduce.

3. Stir in the spinach, cover for a few minutes while it wilts, then season to taste with the salt, pepper and coriander.
 
 
*   Gluten free, wheat free (if you use a wheat free stock), dairy free
*   Vegetarian
*   Can be made in advance
*   Suitable for freezing, but don't add spinach until you've defrosted and reheated the curry
