Blueberry Dessert
16 graham crackers, crushed
1/2 C sugar
1/4 C melted butter
2 eggs, well beaten
1/2 C sugar
1/2 tsp vanilla
1 large package of Philadelphia Cream Cheese
1 can canned blueberries
1 tsp lemon juice
2 TBSP cornstarch
1/2 C sugar
Pour butter over crushed crackers and sugar. Mix. Press into bottom of 8x8 pan. Mix the eggs, sugar, vanilla, vanilla, and cream cheese. Pour this over the crumb crust. Bake 20 minutes at 375 degrees. Drain blueberries and set aside. Put the juice, lemon juice, cornstarch, C sugar in pan and cook on stovetop until thick. Add the berries and spread over the baked mixture. Cut squares. Serve with whipped cream or ice cream.
