We already know that cooking with herbs indoors adds flavor and color without adding calories and fat, so why not take those benefits outside too.

Growing Greens in the Summer Heat

Your greens may feel like bolting, but here are a few tips to prevent that--at least for a little while longer.
  • Leverage shade. Plant lettuce and spinach in your perennial shade garden if you have to--it gets harvested, right? Use taller plants in front of the greens patch. Get some shade cloth, or shade greens with something else from mid-morning to mid-afternoon.
  • Keep the plants picked. Cut the central head out of the broccoli or snip the outer leaves of greens regularly. You won't feel so bad about having excess if you share with friends, the food shelf, or the compost pile.
  • Try seeds bred to resist bolting. Read the seed pack carefully.
  • If you see a plant bolting, take action immediately. Weird, spindly stalks indicate the plant is about to ruin itself by setting seed. Look for seed heads forming and harvest the plant right away.
  • Keep in mind that some veggies just bolt during the hot days of summer. Plant successive plantings in early spring and late summer. Leafy greens are ready for harvest in about six weeks.

Reserve time with Beier's Greenhouse to host your own exclusive Kids Club Planting Party! For groups of 10 or more kids and two adults, must call to reserve your own special date. Kids 12 and under, for Girl Scouts, 4H, birthdays, or just a great play date. Plant container gardens or hanging baskets and learn all about growing things. Today's Recipe
Grilled Butterflied Leg of Lamb with Mint Mustard
6-8 servings

1/4 cup olive oil
3 cloves garlic, pressed or minced
salt and pepper to taste
1 leg of lamb, trimmed, boned, and butterflied

For mint mustard:
6 tablespoons chopped fresh mint, plus fresh mint sprigs for garnish (try orange mint)
3 tablespoons good quality plain yogurt
3/4 cup Dijon mustard
1 clove garlic, finely minced or pressed
1 teaspoon fresh lemon juice

In a bowl, whisk together the olive oil, garlic, salt and pepper. Place lamb in a shallow dish or large zip-top bag and rub the mixture over the entire surface of the meat. Cover and refrigerate overnight.

Prepare the mint mustard. In a small bowl, stir together the chopped mint, yogurt, mustard, garlic, and lemon juice. Set aside or refrigerate if it will be longer than 1 hour before serving.

Prepare a fire in the grill. Place lamb on grill rack and grill until the first side is golden, about 15 minutes. Turn and continue to cook until golden on the second side and an instant read thermometer inserted into the thickest part registers 130 degrees for medium rare, about 15 minutes more.

Transfer lamb to cutting board, cover loosely with aluminum foil, and let rest for 10 minutes before carving. Cut across the grain into thin slices. Garnish with mint sprigs and pass the mint mustard at the table.
