The Herbal Landscape
Mmmm... Lemon Thyme
 Our reader Connie B. sent us an email recently asking if Beier's will carry lemon thyme again this year. The answer is an enthusiastic yes!
Lemon thyme lives up to its name: It's zingy and zesty and takes its place in the background supporting the main cast of your meal. Add it toward the end of cooking. Though the flavor of other thymes stands up to longer cooking, lemon thyme's joyous citrus notes tend to fade if cooked too long.
Though thyme is often ignored by cooks and herbalists, its light woodsy flavor is unique and elegant. Thyme pairs well with rosemary, is best with pork or beef, and truly shines in chowder-type soups and stews.
This season, Beier's will carry English winter thyme, French thyme, lemon thyme, and Mother of Thyme (our old standby). If you've never tried growing this herb before, you'll be pleasantly surprised--it's an easy keeper that doesn't mind poor soils or underwatering, though it will dry up in intense heat.

The Perennial Landscape
SWCD Annual Native Plant and Tree Sale It's that time again! The Southwest Soil and Water Conservation District sells plants and trees native to our area every spring. Trees, shrubs, wildflowers, grasses and sedges are all available, along with seed mixes designed just for the Itasca County area.
Orders must be received by April 30, 2010 for pickup May 20th and 21st. The brochure and order form can be downloaded from www.itascaswcd.org.
Check out this website for great information about shoreline planting, wetlands, and forestry in general. There is also information on how to get your soil tested. Haven't had your soil tested? Get it done--your fruits, vegetables, flowers and trees will thank you!

all old and new vegetable gardeners! Don't miss the Tomato King and

Today's Recipe
Sauteed Carrots with Lemon and Marjoram Serves 4
3 tablespoons olive oil 1 large clove garlic, minced 2 pounds carrots cut diagonally into 1/2 inch slices 1 teaspoon sugar (optional) 1 tablespoon chopped fresh marjoram, or 1 teaspoon dried marjoram 4 teaspoons lemon juice Salt and pepper to taste
In a medium nonstick frying pan, heat 1-1/2 tablespoons of oil over moderately low heat. Add garlic, carrots, sugar, and dried marjoram if using. Cook, covered, stirring occasionally for 5 minutes.
Uncover the pan. Raise the heat to moderate and cook, stirring frequently until the carrots are very tender and beginning to brown, about 8 minutes longer.
Remove from heat. Stir in the remaining 1-1/2 tablespoons oil, the lemon juice, and fresh marjoram if using. Serve hot.
