Walnut-Peach Pie
Makes one 9-inch pie

1 unbaked pie crust (storebought is fine)
4 cups peeled, sliced peaches
2 eggs
1/3 cup honey
2 tablespoons butter
1/2 cup coarsely chopped walnuts
1/2 teaspoon cinnamon

If using a home made pie crust, preheat the oven to 400 degrees, line the pan with the crust, prick all over with a fork, and blind bake for 10 minutes. Cool for 10 minutes before filling.

Allow the oven to cool to 325 degrees. Fill shell with peaches. Beat together eggs and honey and pour over fruit. Dot with butter, cover with nuts, and sprinkle with cinnamon.

Bake for 35 to 40 minutes until filling is set. Cool completely before cutting and serving.
