Those of us who are mildly obsessed with herbs enjoy reading olde tyme herbalists. Those people really knew what they were talking about! One name that may be familiar is "Mrs. Grieve" who wrote her herbal in the days before married women were known by their first names.

7 Minute Pasta Sauce with Sun Dried Tomatoes
Serves 4

1 pound pasta such as ziti, rigatoni, elbows, or spirals
3 tablespoons olive oil
2 tablespoons additional oil from the sun dried tomato container
4 cloves of garlic, sliced
1/2 teaspoon red pepper flakes or cayenne
1 cup sun dried tomatoes, drained if packed in oil, sliced into 1/4 inch strips
1 1/2 cups cooked cannellini beans or other white beans (canned is fine, drain thoroughly)
1 tablespoon freshly chopped parsley
1/2 cup Parmesan cheese

Cook the pasta as directed on the package. The sauce takes about 7 minutes from start to finish, so time accordingly.

Place oil in a large skillet and heat gently over medium heat. Add the garlic slices and cook 1 minute. Do not overcook. Add the cayenne or red pepper flakes and toast for about 30 seconds.

Add the tomato slices and toast for 1-2 minutes. Add 1 cup of warm water and allow the sauce to simmer briskly for 2-3 minutes, softening the tomatoes and releasing their flavors. Stir in the drained beans, salt and pepper to taste. Add more water only if necessary. Simmer four minutes.

Add the drained, cooked pasta directly to the skillet and toss. Stir in the cheese and garnish with parsley. Serve immediately.
