vinegarMaking Herb Vinegars

Making herbed vinegars is so easy anyone can do it. Make a pint jar as an experiment or make gallons if you know you like to use vinegar for a variety of cooking projects. You can use fresh herbs if you have them, but even dried herbs will work.

Home-Canned Tomato Sauce
Makes 4 quarts

18 large tomatoes
2 green, red or yellow sweet peppers
2 medium onions
3 tablespoons sugar
1 teaspoon allspice
1/2 teaspoon cinnamon
1 teaspoon ground cloves
2 teaspoons salt
2 cups apple cider or white vinegar

Peel, core and chop tomatoes, discarding seeds if desired. Chop the peppers and onions finely.

Combine all ingredients. Cook over very low heat 2-4 hours until it's the desired thickness.

Follow the usual steps for canning fruits by washing the jars and lids, etc. Place boiling hot sauce in hot canning jars and seal. Process for 10 minutes in a hot water bath.
