Oven Fried Chicken for Two Serves 2
|

1/4 cup buttermilk 1 cup panko or any kind of bread crumbs 1 tablespoon vegetable oil 1/2 teaspoon paprika 1/4 teaspoon salt 1/4 teaspoon pepper 2 boneless, skinless chicken breast halves 2 chicken legs, skin removed
Position the rack in the lower third of the oven and preheat to 400 degrees. Pour the buttermilk in a large bowl, preferably glass; set aside. Combine bread crumbs, oil, paprika, salt and pepper in a second large bowl or pie plate.
Dip the chicken pieces first into the buttermilk, allowing the excess to drip back into the bowl. Dip into the bread crumb mixture, coating all sides of the chicken. Place chicken on a non-stick baking sheet or a regular baking sheet lined with parchment paper.
Bake for about 25 minutes or until the juices run clear. Do not overcook. Serve immediately.
