Roasted Green Beans with Dill Vinaigrette
Serves 8

2 pounds fresh green beans, trimmed
3 tablespoons olive oil
2 tablespoons white wine or cider vinegar
1 1/2 teaspoons Dijon mustard
1/2 teaspoon sugar
1/2 teaspoon pepper
2 tablespoons fresh chopped dill

Preheat oven to 450 degrees. In a large roasting pan, toss green beans, 1 tablespoon oil and salt to taste until well coated. Roast, stirring twice, until tender and slightly browned, 20 to 30 minutes.

Meanwhile, prepare the vinaigrette: In a large bowl, whisk vinegar, mustard, sugar and pepper until blended. Pour remaining 2 tablespoons oil in a thin stream, whisking constantly. Stir in dill.

When green beans are finished roasting, transfer to vinaigrette bowl. Stir until beans are well coated. Serve hot or at room temperature.
