Roasted Cauliflower Serves 6

1 medium head of cauliflower 1 tablespoon olive oil 2 tablespoons fresh or dried parsley 1 garlic clove, finely chopped
Preheat oven to 450 degrees. Wash the cauliflower and cut into 1-1/2 inch flowerets. In a small pan, toss the cauliflower with the olive oil and salt and pepper to taste. Roast until tender, about 20 minutes, stirring at least once.
In a small bowl, combine garlic with parsley; sprinkle over roasted cauliflower. Continue to roast 3-5 minutes longer. Spoon into serving dish and serve hot.
