Berry Fool with Black Pepper
Serves 4


1 1/3 cups fresh raspberries, or thawed frozen raspberries
1/2 cup sugar
1 teaspoon fresh ground black pepper
3 tablespoons Grand Marnier or other orange liqueur, or substitute freshly squeeezed orange juice
1 1/2 cups whipping cream
1 quart strawberries

Wash and hull the strawberries. Reserve four whole and halve the rest.

In a small saucepan, combine the raspberries and sugar. Cook over very low heat, covered, stirring occasionally, until the berries are soft and the sugar is dissolved, 5 to 10 minutes. Strain through a fine mesh strainer into a medium bowl, pressing the pulp to extract the juice. Stir in the pepper. Chill in the refrigerator for about 20 minutes (or longer, if you like).

In a large bowl, whip the cream until it just holds firm peaks. Do not overwhip. Fold in the raspberry mixture, the Grand Marnier or orange juice, and the halved strawberries. Be gentle! Fold until just combined. Chill until needed.

Serve in stemmed glasses or clear glass bowls, topped with the reserved whole strawberries.
