Stir-Fried Cucumbers and Radishes Serves 6
|
|
1 large cucumber 1 1/4 teaspoons salt 1 tablespoon vegetable oil or peanut oil 4-8 large radishes 2 bunches of watercress or other leafy green 1 tablespoon hoisin sauce 1/8 teaspoon (or more) ground red pepper
Thinly slice the cucumber; leave the peel on if it just came from your garden. In a colander over a bowl, toss cucumber and 1 teaspoon salt. Let stand 20 minutes at room temperature. Pat cucumber slices dry with a paper towel.
Trim and thinly slice the radishes. Trim tough stems from the greens if needed.
In a 12 inch skillet or wok, heat the oil over high heat. Add cucumber and radish slices and cook, stirring frequently, about 4 minutes. Add the greens, hoisin sauce, remaining salt, and ground red pepper. Stir and fry until the greens are wilted, about 2 minutes. Serve hot.
