The Edible Landscape
 Quick Leafy Greens Tips
- Normal planting time starts now and continues all summer.
- Minimum ground temp must be 40 degrees or higher.
- Grows best during cool, moist weather.
- Plant underneath taller plants such as tomatoes or corn to give them a little shade.
- Scatter the seeds in rows to make harvesting easier.
- Rows should be 20 inches apart.
- Plants should be 2 to 12 inches apart after thinning. This depends on what kind of leafy green you've planted.
- Plant seeds 1/4 inch deep.
- Harvest as soon as they are big enough for you (pretty much anytime).
- Plant every two weeks to keep a fresh crop growing at all times.

Leafy Green Soup Makes 2 servings
|
|
1 tablespoon butter 1 small potato, sliced paper thin 1/2 small white onion, chopped 1 clove garlic, chopped finely 1 1/2 cups vegetable or chicken stock 4 ounces leafy greens of any kind 1/2 cup half and half, cream or whole milk Salt and pepper
Melt the butter in a small saucepan. Add onion, garlic and potato slices and cook for about five minutes over medium heat. Add the stock and bring to a boil. Cover and cook for 8 minutes or until potato is very tender. Add the leafy greens and cover immediately. Steam for 4 minutes. Transfer to blender or food processor and allow to cool for a few minutes. Blend until smooth. Return to saucepan, add the cream, and heat gently. Do not allow to boil! Salt and pepper and serve.
