A. Pasta of choice - Elbow - Bowtie - Linguini
Enough to make 1 - 2 cups cooked
B. 2 c. chopped fresh vegetables (mushrooms, onions, garlic, bell peppers, tomatoes)
C. 1 c. cooked meat (ham, fish, shrimp, steak, chicken, turkey)
D. 2-3 T. canola oil
E. Sauce of choice - Alfredo, Marinara, Spaghetti - I like fresh ones in dairy case. I start with 3/4 - 1 cup and make sure I get everything coated.
Prepare pasta according to package directions. Drain and set aside. Using non-stick deep skillet, heat oil. Add chopped vegetables. Cook until tender. Add more oil if needed to keep them moist. Add meat. Heat thoroughly. Add sauce. Stir until all ingredients are coated. Add pasta. Continue cooking to heat thoroughly. Right before serving, add salt and pepper to taste. Serve with grated Parmesan cheese.
