Apple Bread
3 eggs, beaten 2 c. sugar 1 c. oil 1 T. vanilla extract 3 c. flour 1 t. baking soda 1 T. cinnamon 4 medium apples or 3 large apples, cored and chopped 1 c. chopped pecans
Combine eggs, sugar, oil and vanilla until mixed
Combine flour, baking soda, cinnamon, and pumpkin pie spice - stir into the egg mixture. Next, fold in chopped apples and pecans.
Divide batter into equal amounts and place into 2 greased and floured loaf pans (9x5)
Bake at 325 for approximately 1-1/4 hours. Baking time may vary depending on your oven.
Makes 2 loaves
This tastes wonderful served with softened cream cheese. My grandson likes it with peanut butter as a sandwich.
