Your Health Is Important
If a medical research team told you that you could make some dietary changes and live or continue eating as you are and probably die a miserable death, would you be willing to change? What if several research teams - independent of each other - over a 20 year window - came up with the same conclusions? A lot of people say it is hard to make dietary changes even though they've been told to make them. A friend said she'd rather die than give up chocolate. I had heard that comment several times, I finally said to her if you knew someone was holding a weapon on you, and you would die if you ate a bite, I don't think you would have much of an appetite for chocolate. She said well, no. You do get in the habit of eating certain foods without a thought, however, if you know it's causing your blood pressure to go up, blood sugar to be off, arthritis to hurt more, gout to flair up more often, cholesterol and triglycerides to be too high, you might want to take steps to start changing those areas. Wow, summer arrived with a force this year. It has all the memories of 1980. So, how many of you are using your sun blockers? People seem to put them on arms, shoulders, and face. They fail to put them on ears, back of neck, feet, legs, and part in hair (scalp). These are places a lot of skin cancers can show up. Look in a mirror. If you can see skin, so can the sun. Be sure the SPF is high enough, waterproof, and sweatproof, and repeat often.

We have a lot of pets as patients and know some of the pets well. With summer here and promising to be miserable, don't forget to keep plenty of water out for them. Make sure they have a shady place to get out of the sun and heat. Please, never leave them in a hot car, even with the windows cracked. Don't leave them alone in the car with the motor running either. Too many things can and do go wrong daily with that scenario. They look to you for love and protection - please don't let them down.

Tex-Mex Casserole
4-5 c. Cooked chicken; white meat, cut into pieces 1 pkg. (1lb) tortillas (corn or flour) - cut into pieces 1 can cream of mushroom soup 1 can cream of chicken soup 4 oz. taco sauce 4 oz. salsa (your strength) I prefer mild 1 small can chopped black olives 1 small white onion, chopped 1/2 lb. cheddar cheese (I use closer to 1 lb) 1/2 c. milk 1 large can chili 1 small can mushrooms, drained and chopped
Mix soups, chili, salsa, taco sauce, olives, onions, and garlic (1 chopped clove, if desired) and milk together in large bowl.
Layer in casserole dish in this order: start with mixture, then tortillas, chicken, cheese.
Always end with cheese layer.
Bake at 375 for 45 minutes.
Serve with Spanish Rice and salad.
