I know I quote a lot of my Dad's sayings but as I get older I realize just how true they were then and now.
 
"TASTE YOUR WORDS AS YOU SAY THEM - SOME DAY YOU MAY GET TO EAT THEM."
 
A lot of people need to consider that. They seem to say whatever comes into their minds without considering the effect their words may have on someone's self-esteem or feelings.
 
"Mom, did you see how huge she is?"
 
"Yes, that is gross."
 
She is huge but you could tell by the look her face that she isn't deaf. I know her and she is currently losing weight, having a difficult time of it, and hearing that hurt her so much I had to talk myself blue to keep her from blowing her program for that day. That mother should explain, a lot of medications - particularly mood altering drugs and steriods - usually make a person have no control over thier appetite and to not be so judgemental. If you have never had a weight problem, a scar, a disease, or any other kid of situation that made you "different", great and thank God for your good fortune (because that is a gift from God), but please, also be gracious to others with a kind attitude or God may just feel you need a lesson in humility. Just like Dad said, you may get to eat your words!
 
Places of Interest
 
The saying get out and play an hour a day isn't just for kids. Here are some places that we've found to get out and have fun while getting some exercise.
 
Dynorock Indoor Rock Climbing Gym
The walls 25 feet tall and there are 1,600 sq feet of them. The walls are of various difficulty so there's something for everybody. Gary, Michelle, and Brad love this place!

Cedar Ridge Nature Preserve
The preserve is a fun, cheap place to take the family. It has 9 miles of natural hiking trails of various difficulty - some are wheelchair accessible and others are steep, going up to the preserve's full elevation of 755 feet (the highest point in DFW).

Old recipes from newsletters nearly 20 years ago so if you missed them, here they are again.
 

King Ranch Style Chicken Casserole
 
Nacho Flavored Doritos
2 cans chicken (white meat)
1 can cream of mushroom soup
1 can cream of chicken soup
1/2 Rotel tomatoes (diced)
1 c. grated cheese

Cover bottom of 9x13 inch pan with Doritos. Break up chicken into bite size pieces and place evenly on top of Doritos. Mix soup and tomatoes in bowl and pour evenly over chicken. Top with grated cheese. Bake at 350F for 30 minutes. Serve with salad and green beans.

More Casserole
 
2 medium onions, chopped
1/2 t. minced garlic - about 1 clove
1 green bell pepper, chopped
1 T. veg oil
1 lb lean hamburger meat
1 can tomatoes (diced)
1-3 T. chili powder (depends on how spicy you want it)
1 8oz. can tomato sauce
1 small can English peas (drained)
1 can whole kernel corn (drained)
14oz. chopped mushrooms or small can mushrooms pcs.
1 1/2 pkg. spaghetti - cooked and drained (about 8oz. total)
2 c. grated cheese
salt and pepper

Grease a 13x9x3 inch casserole dish. Preheat oven to 375F. In large pan, cook onions, garlic, and bell pepper. Cook until onions are nearly clear. DO NOT BROWN. Add hamburger meat and brown. Add tomatoes, chili powder, and tomato sauce. Add mushrooms, peas, and corn. Mix all well. Add cooked spaghetti and blend well. Pour half of mixture in casserole dish. Cover with 1 c. of cheese. Add remaining mixture. Top with other cup of cheese. Bake at 375F for 20-30 minutes. Serve with garlic bread, salad, and brownies.
 
Serves 6-8

Rice Salad
 
Fix 2 pkg of Chicken Rice A Roni according to directions. Saute 2 red onions (chopped) and 2 bell peppers (chopped) until semi done. Do not brown. Mix with cooked Rice A Roni. Add 1 small jar of Pimentos, 2 jars marinated artichokes (chopped) and 2 jars marinated mushrooms (chopped). Add mayonnaise to taste. Great hot or cold.
 
My sister-in-law Carolyn Ray introduced this salad to me. It's always a pleasant change. Can be cut in half for fewer servings.

Oriental Casserole
 
1 small can tuna, chicken, turkey, or salmon
1 large can chow mein noodles (about 2 cups)
1 large can chow mein vegetables drained (about 2 cups)
1 can cream of mushroom soup
1 can cream of celery soup

Combine all ingredients in large bowl. Place in 9x13 pan and bake uncovered 350F for 40 minutes.
 
Cream of chicken soup can be substituted for cream of celery. You can top with grated cheese if you desire.
 
Serve with salad and rolls. My kids love it. You may want to double the recipe if you're serving more than 4 people.
