GARDENING TIPS

I am continuing to build up my vegetable beds with compost, vegetable and fruit scraps and peels, shredded leaves, etc. I have turnips, collards, onions, lettuce, and new potatoes making as of 12-22-09 when I am writing this. I still have pears from our two "dwarf" trees - about 14-16 ft. tall. All of our pecans have "dried" and are delicious for the holiday dishes. I am continuing to prepare areas for spring gardens on the pretty days. A lot of spring crops can go in the ground around March 10th - 15th, especially cool crops, such as lettuce, cabbage, broccoli, and sweet peas. The only thing that would harm them is a hard freeze. Watch the weather to see if they need to be covered up for that and we're good. Enjoy!

ACIDIC OR ALKALINE?

Do you know what you body state is? Do you know what pH you body needs to be able to fight off most disease states? What disease states are you trying to fight off now without winning? Could boosting your pH to a more alkaline state help? Do you love sugar, pasta, carbs? Do you know they make your body more acidic? Acidic bodies, according to recent studies, help most disease states with their fight to destroy our bodies. There is an excellent website (http://www.angelfire.com/AZ/sthurston/) that tells the importance of having a slightly Alkaline body and what to eat and drink to achieve it - it may be even more important than what not to eat and drink.

One of the interesting things that keeps coming up is the product  Xylitol. Xylitol is Alkaline where as sugar is Acidic. Glycaemic index for Xylitol is 7 where as sugar is rated 100. Finnish researchers recommend Xylitol to promote intestinal absorbtion of calicum - which may improve bone density. Xylitol may also inhibit plaque formation in the mouth. Considering all that is known about Xylitol is good and for the most part sugar can be "not so good" one of my New Years resolutions is to incorporate Xylitol into my diet more.

So back to the question - is your body Acidic or Alkaline? If you want to know, come by the pharmacy and we will offer you a free saliva testing - no eating or drinking for one hour before testing.

KATHY'S KORNER

Baked Apples/Pears

2 apples, cored and sliced into wedges
1 pear, cored and sliced into wedges
1 C. honey
2 T. water
1 T. cinnamon
3 T. butter, divided
1/2 T. allspice, optional
1/4 T. cloves, optional

Place apples and pears into greased 1 quart baking dish. In bowl, combine honey, water, spices, & cinnamon. Pour over fruit mixture. Dot with butter. Bake 350 for 20 minutes. Check for fruit to be tender. Continue checking every 5 minutes or so if not tender at 20 minutes.

- Breakfast Casserole

32 oz pkg. frozen shredded hash browns
1 lb. sausage - I prefer sage - browned and drained
1 onion, peeled and finely diced
1 pkg. sliced mushrooms
1 1/2 C. shredded cheddar cheese - I prefer mild
1 dozen eggs
1 C. milk
1 T. salt
1 T. pepper

In greased slow cooker, layer 1/3 of hash browns, sausage, onion, green pepper, mushrooms and cheese. Repeat with 2 more layers. Top with final layer of cheese. In bowl, mix eggs, milk, salt and pepper. Pour over all layers on top. Cover and cook on low for 10 hours.

Serves 6-8, depending on appetite.
Server with biscuits, toast, or English muffins and orange juice.
Note: Can add spinach or other vegetables as long as they are not a vegetable that "grows" in flavor such as broccoli.
