Recipe
Tart with Caramelized Onions, Rosemary & Stilton
The New York Times, September 30, 1999 Revisions by Laura Kirkley Serves: 8
Ingredients
- 3 Tablespoons unsalted butter
- 3 Tablespoons il Fustino Mission Extra Virgin Olive Oil
- 2 Large Yellow Onions, halved lengthwise and thinly sliced
- 2 Sprigs Fresh Rosemary
- 1/4 Cup Milk
- 1 Medium Egg
- 1 Prepared Puff Pastry Sheet
- 1 1/2 Ounces Stilton Cheese, crumbled
- 3 or 4 Tablespoons Toasted Pine Nuts
- il Fustino 25 Year Old Balsamic Vinegar, for drizzling
Method
- In a large flat bottomed skillet over low heat, melt butter and olive oil

Add onions and leaves of one Rosemary sprig

Cook, tossing occasionally until onions are limp and dark golden brown, 30 to 40 minutes
- Remove from heat and allow to cool for 15 minutes
- Preheat oven to 400 degrees
- Line an 11" X 17" baking sheet with parchment paper
- Unroll prepared Puff Pastry Sheet and place on baking sheet
- In a small bowl, whisk egg and add milk, continue to whisk for several seconds
- Stir in Caramelized Onions
- Use a fork to spread onions mixture evenly over pastry (let excess egg mixture drip back into bowl) leaving a 1-inch border
- Scatter Stilton, Pine Nuts and Rosemary leaves over onion mixture
- Use a pastry brush to dab edges of tart with leftover egg mixture
- Gently fold over edges of tart to form a kip and brush with remaining egg mixture
- Bake until pastry is puffed and golden, 20 to 25 minutes
- Serve drizzled with Balsamic Vinegar
- Serve warm or at room temperature
