Chicken Salad Delight
Ingredients:

• 1 cooked chicken breast, diced
• ½ cup birch sugar
• ½ cup fresh lemon juice
• 2 teaspoons diced yellow onion
• 1 teaspoon Dijon-style prepared mustard
• ½ teaspoon sea salt
• 2/3 cup grape seed oil
• 1 tablespoon poppy seeds
• 1 head romaine lettuce, torn into bite-size pieces
• 4 ounces crumbled goat cheese or shredded low-fat Swiss cheese
• 1 cup raw unsalted cashews
• ¼ cup dried unsweetened cranberries
• 1 green apple, peeled, cored, and diced
• 1 pear, peeled, cored, and sliced

Cooking instruction:
1.  In a blender or food processor, combine birch sugar, lemon juice, onion, mustard, and sea salt. Process until well blended.
2.  With machine still running, add oil in a slow, steady stream until mixture is thick and smooth.
3.  Add poppy seeds, and process just a few seconds more to mix.
4.  In a large serving bowl, toss together the romaine lettuce, crumbled goat cheese, cashews, dried cranberries, apple, and pear.
5.  Pour dressing over salad just before serving, and toss to coat
