Tip of the Month

Sorry, I was just Daydreaming.
Daydreaming is looked upon negatively because it represents 'doing nothing' in a world that emphasizes productivity. We are under constant pressure to achieve, contribute, and succeed.

But actually, daydreaming, allows your mind to take a break, a mini-vacation in which to release stress and anxiety - and return refreshed.
Take 15 minutes for daydreaming and let your mind wander. Instead of thinking about all the things you have to do, stop and imagine things, places, people.
It will put you in a much better mood, clear your mind and help you be more productive in the long run.

When you find yourself swamped and getting distracted, instead of throwing yourself into your work, go sit quietly and allow yourself 15 minutes of daydream time.  It can actually boost productivity.
When is the last time you took "time out" to Daydream?

This Months Recipe

Mothers Day Irish Cream Chocolate Mouse. This signature dessert served at many Fairmont Hotels Mother's Day Brunch has only 3 ingredients! So easy to make. Your guests will think you spent hours making this creamy delight but only you'll know how easy it was.

Ingredients:
Real Cream and dark chocolate, spiked with Irish cream, are a match made in heaven. For the final touch, garnish this very decadent but easy to prepare dessert, with softly whipped cream, fresh berries or shaved chocolate.

3.5 oz (100 g) bittersweet (dark) chocolate, chopped
2 tbsp (30 mL) Irish cream
1-1/4 cup (300 mL) 35% Whipping Cream, divided

Preparation:
In a heatproof bowl, set over a saucepan of simmering water, melt chocolate. Remove from heat. Add Irish cream and 1/4 cup (50 mL) cream and stir until smooth; set aside.
In a chilled bowl, whip remaining cream until firm peaks form; fold into cooled chocolate mixture. Divide into dessert cups, cover and refrigerate for at least 2 hours or up to one day.

Tips:
Use high-quality chocolate with 70% cacao for the best flavour.
