Heart healthy recipe; CREAM OF WILD MUSHROOM SOUP This soup is so rich and creamy, it's hard to believe it contains no cream.
1 ounce (½ oz each ) dried morels and chanterelles (or any other dried mushrooms) 3 cups vegetable stock 1 cup onions chopped. 2 tsp low sodium soy sauce ½ cup white mushrooms chopped 1 tsp sugar ½ cup whole wheat flour ½ cup flour 1 cup buttermilk 1/2 cup evaporated skim milk Paprika and favorite fresh herbs for garnish Soak dried mushrooms in warm water for 15 minutes until soft, rinse and coarsely chop. In a large saucepan, place mushrooms, stock, onions, soy sauce and mushrooms. Bring to boil, and then reduce heat to simmer. Meanwhile, in a separate bowl, combine sugar, whole wheat flour and water. Mix into a smooth paste. Pour the paste through a sieve into the soup and mix thoroughly. Cook for 3 minutes, stirring occasionally. Add buttermilk and evaporated skim milk and bring back to a simmer. Allow soup to cool for 5 minutes. Puree in a food processor until smooth. Return soup to saucepan. Refrigerate if serving later. When ready to serve reheat slowly to a simmer, stirring well.
Divide into serving bowls. Sprinkle with paprika and garnish with fresh herbs. Enjoy!
