Good news ladies! Good things happen when you take time to linger over your meals.
 
If eating is one of life's greatest pleasures, why are North Americans racing through it?
 
In Europe, meals can last for hours. That's what my daughter tells me who is away at school in Milan, Italy. Since the two of us seem to chat about food most of the time, this was very intriguing information. She noted that European women are on average slimmer, yet seem to spend more time at the table.

New research suggests the two may be linked. University of Rhode Island scientists have proved that eating slowly means eating less. Researchers asked 30 women on two different occasions to eat a meal until they were comfortably full. For one meal, the women ate quickly, finishing in less than 10 minutes. On the second occasion, they stretched the same meal to 30 minutes by chewing small bites and putting down their silverware between each mouthful. When the women ate slowly, they reported enjoying the taste more, feeling satisfied and full longer afterwards, and they ate about 10% less than when they bolted down their meal!

Calamari Mango-Avocado Salad
A flavorful, colorful salad  you'll love serving
One of our favorites!
 
2 cups raw squid (sliced rings and tentacles)
 
1/4 cup flour
2 Tbs vegetable oil
 
8-10 cups mesculin salad green
3 green onions
1 ripe mango
1 ripe avocado (but not overly soft)
2 Tbs soya sauce
2 Tsp sesame oil
 
Prepare the Calamari
1 - Preheat large sauté pan with the oil on medium high.
2 - Lightly dust squid pieces with flour - discard any excess flour.
3 - Sauté calamari until golden brown.  This can take up to 10 minutes but it will golden in time.  Do not add extra oil and deep fry.  The 2 Tbs of oil is enough to sauté them and to turn crisp and golden.
4 - Once crisp and golden set aside to cool on paper towel and begin to prepare the salad.
 
Prepare the salad
1- Peel and slice mango into long strips and set aside.
2- Cut avacado in half and remove the stone.  Peel and slice the avocado length-wise to achieve full yet thinly sliced pieces about 1/4 inch thick and set aside
3 - In a large bowl add mesculin greens.
4 - Thinly slice the white portion only of the green onion.   
5 - Mix in the chopped onion (white section) with the mesculin. 
6 - Mix the soya sauce and sesame. Toss evenly with the mesulin and onion.  
 
Assemble dish
1 - Choose your favorite serving platter that is about 4 to 6 inches deep and 10 to 12 inches wide.  Sizes can vary.
2 - Add the mixed and dressed mesculin to the platter and spread evenly.
3 - In a fan-like shape, add the mangos covering the mesculin.
3 - In the same fan-like shape, add the avocado.
4 - In the centre of the platter, pile on the calamari. 
 
Serves 6- 8  and will be sure to delight!
