Hello

It's been non-stop since I last wrote with Twice appearing at lots of Christmas sales, the catalogue going out and the website throwing orders at us.  Thanks to everyone who's chatted to us at fairs, come to our sale here at Inchyra and given us some fantastic feedback.  Glad you like it all!

There are now only 34 mail order shopping days to Christmas with last orders by mail on 20th December (we can send out by courier until 22nd) so however much you don't want to think about it, Christmas shopping is pretty inescapable now!   Luckily, it couldn't be easier than shopping with us online or by phone so I've put lots of ideas in this email and there are many more on our website at www.twiceonline.co.uk.

Our own label bags are made from deerskin leather and suede in the last remaining Scottish deerskin tannery.   Each bag is hand-made to our design and lined in limited edition vintage prints.   The Lily (shown left) in suede is available in Midnight Blue and Chocolate Brown, and has three internal pockets and a full zip closing.

Cluck, cluck - I'm a push over for a sob story ....
About a month ago someone told me about the Battery Hen Welfare Trust which aims to bring the plight of battery hens to the fore but also arranges for ex-battery hens to be re-homed.  New battery chucksIt's a great charity doing a great thing - and the whole idea immediately appealed to me - we have an increasing managerie of 'rescues' from an ex-race horse to Minty the cat - six bald ex-bats should fit in well!  So on Sunday we went to the farm of Jim and Lorna Duff near Stirling to collect our girls.   This photo was taken in the run where the 750 chickens were taken after being collected from the battery farm on Saturday.  As you can see, things could have been better - they've lived their whole life in a small cage, standing on wire and don't know how to roost, use a nesting box or even that they should get out of the rain. 

They are now happily ensconced in their new spacious home in our barn and ... have already produced their first eggs.   Now we just have to teach them how to be chickens.

The children are naming one chicken each (Lavender and Petunia I think so far), Ray who will be looking after them while I'm away with Twice has named one Harriet, Twice's Finance and IT whizz (husband James!) has named one Lady Marmalade and I'm now stuck for ideas - and I bet you could do better so I'm going to give two of our beautiful vintage ticking Lavender Hearts (very fitting I thought) for the best name for my chicken!   Entries please to info@twiceonline.co.uk.

Absolutely the best Mince Pies in the world!
Mince Pies
We made our mince pies this weekend and so I thought I'd let you have this recipe for my mother's mince pies, which are, with out any doubt at all, the BEST MINCE PIES IN THE WORLD!

Ingredients
12oz self raising flour
5oz butter
1oz lard
1tsp caster sugar
2 egg yolks
Ice cold water
Pinch of salt
Milk for brushing
Mincemeat - with added brandy if you like!  (My mother swears by Robinson's)


Preheat your oven to 180C.  Sieve the flour and caster sugar into a mixing bowl.  Add the pinch of salt.  Chop the butter and lard into small chunks (1 or 2cm square-ish) and rub in until the mixture is like breadcrumbs.   Make a well in the middle and put the egg yolks in.   Add a small amount of the cold water - approximately 2 tablespoons in total.   Bring the mixture together and roll out to about 1/4".   This is very short pastry so it will be fairly crumbly when you roll it out.   Grease your pastry tin.   Choose pastry cutters to fit with one slightly larger than the other.   Cut equal numbers of the two sizes of pastry and line the pie tins with the larger of the two.   Fill each pie with approximately 1tsp of mincemeat.   Wet your finger and run around the rim of the pastry case and then pop the smaller one on top and seal it.   Prick the top of each mince pie with gently with a fork and then brush the top of each pie with milk.  

Bake at 180C for 10-12 minutes until golden.

If you make these now they will freeze beautifully and then that's one more thing done!
