Elizabeth Pettis 

Elizabeth is currently interning at the Fairview Inn this Summer. She will graduate from Ole Miss in December with a degree in Hospitality Management. Elizabeth really enjoys the event planning side of Hospitality Management and after graduating, she hopes to find a job in Jackson working with events.
One of her projects this Summer at the Fairview is making the Inn eco-friendly. She is working to set up recycling all throughout the Inn and getting the Inn eco-friendly certified.
When not interning at the Fairview or staying busy with school, Elizabeth enjoys spending time with family, friends and traveling. She loves cooking and learning new things! Stop by and see Elizabeth this Summer.   
Sophia's is Celebrating Bastille Day!
    Sophia's will be serving a French inspired menu       on Friday, July 13 in observance of Bastille Day.

Sophia's Kitchen Corner
Lemon Verbena Iced Tea

Ingredients:
1/2 C Sugar
1/2 C Water
1 C Lemon Verbena Leaves
4 C Ice
6 C Brewed Tea, Chilled
Mint Leaves (Optional)
Lemon Wedges (Optional)
Directions: 
Combine sugar and water in a small saucepan; bring to a boil. Cook lemon verbena leaves in boiling water, 1 minute. Drain and plunge into ice water, drain. Combine sugar syrup and verbena leaves in a blender; process until smooth. Cover & chill overnight. Strain sugar syrup through a fine sieve into a bowl. Place 2/3C ice into 6 tall glasses; add 1C brewed tea & 2T sugar syrup to each serving. Garnish with lemon & mint.
