Lemon Parmesan Vinaigrette1T Dijon Mustard
1C Champagne Vinegar
3T lemon juice, freshly squeezed
1 dash Tabasco sauce
1T thyme, minced
1 Shallot, large, minced
3 lemons zested, freshly grated
1C parmesan cheese, freshly grated
2C olive oil
salt and pepper
Whisk mustard, vinegar, lemon juice and zest together. Add thyme, shallot, Tabasco. Slowly add olive oil then add parmesan cheese, let set at room temp for one hour to let flavor develop then check for salt and pepper.

Guest Services Manager, Amber Darby
We are proud to introduce Fairview Inn's new Guest Services Manager, Amber Darby (pictured left). Amber brings a strong hotel background with her to the Fairview. For the past few years, Amber was the Assistant General Manager at Hyatt Place in Ridgeland. As Assistant General Manager, Amber learned all aspects of working in a hotel from working the front desk to working in the kitchen; basically helping and directing in any way requested.
Originally from Batesville, MS, and a graduate of Ole Miss with a degree in Hospitality Management, Amber says she enjoys working in a hotel environment because she gets to meet so many great people. She loves helping others and working hard to make sure every guest has a memorable experience. When not working, Amber enjoys spending time with her husband Chad and their 10 month old Boxer, Gracie.
Over the years, many of you may have gotten to know our previous Guest Services Manager, Lauren Chase (pictured right). Lauren and her husband recently moved to Chicago due to her husband's job relocation.
Amber hopes to meet and develop a relationship with everyone that Lauren got to know so well and is available to answer any question you may have! Stop by and meet Amber!

-Mother's Day in France is celebrated on the last Sunday of May. A family dinner is the norm and traditionally the Mother is presented with a cake that looks like a bouquet of flowers.
-Mother's Day in the UK is celebrated on the fourth Sunday in the month of Lent. There is a tradition of making rich almond cake for Mothers called "Mothering Cake" or "Simnel Cake."
-Starting in the early twentieth century, Sonora Smart Dodd is credited with starting the celebration of Father's Day.
-In the beginning, Father's Day was celebrated by wearing flowers to honor ones Dad; a red flower if the Father is living, a white if he is deceased.
-in 1972, President Nixon made Father's Day a permanent national holiday.
-According to the United State Naval Academy's website, the time honored tradition of throwing graduation caps in the air began with the military class of 1912, with the cadets celebrating their graduation from the Academy by throwing their caps into the air.
-Historians have traced academic apparel dating back to 12th century Europe. Academic studies were conducted in churches, which were very cold. The solution was to wear long robes and hoods to combat the cold.
