Sophia's Kitchen Corner
Chocolate Truffle Tart
| Crust:
2/3C all-purpose flour
1/2C powdered sugar
1/2C ground walnuts
6Tbsp butter or marg., softened
1/3C baking cocoa
Filling:
1 1/4C heavy whipping cream
1/4C granulated sugar
1 pkg. semi sweet chocolate morsels
2Tbsp seedless raspberry jam
1C sweetened whipped cream (opt.)
1C fresh rasp. (opt.)
For crust, preheat oven to 350. Beat flour, powdered sugar, nuts, butter and cocoa in large mixer bowl until soft dough forms. Press dough onto bottom and up side of ungreased 9 or 9.5 in. fluted tart pan with removable bottom or 9in. pie plate.
Bake for 12 minutes unto puffed. Cool completely in pan. For filling, combine cream and sugar in med. saucepan, cook over medium heat, stirring occassionally until mixture comes just to a boil. remove from heat. stir in morsels and jam, let stand 5 mins. whisk until smooth. transfer to small mixer bowl. cover, refrigerate for 45 to 60 mins. Beat for 20-30 sec. or just until color lightens slightly. spoon into crust. refrigerate until firm. garnish.

Get to Know Our Staff
 Fluff SharpKnown around the Fairview as Queen of the Castle, Fluff is an 11 year young Chinese Crested Powder Puff (her birthday is coming up- March 10, mark your calendar!). There are two versions of the Chinese Crested breed, one being hairless and the other being soft and cuddly like Fluff. She enjoys her job of ruling the roost and knows each staff member (especially the girls in the front office) very well. You will often hear her excited howl when she sees a familiar face or meets a new friend. When not busy with her duties of running the Inn, Fluff can be found napping, snacking, taking long walks or playing fetch. We can attribute Fluff's bright eyes and bushy tail to her healthy diet.
