The suite is named the Magnolia Suite because of the 90 year old Magnolia tree right outside the second floor bedroom window, as well as being decorated with Magnolia oil paintings and prints throughout the suite.

If you've ever experienced the air at a waterfall, on a mountain top, at the seashore, or after a thunderstorm, then you've experienced the results of negative ions and you know the air smells fresher and how much easier it is for you to breathe.
Salt crystal lamps are negative ion generators. Many medical studies in Europe have shown health benefits and provide relief from hay fever, asthma, and allergy relief, improvements with sinus related illnesses, migraines, and reduce susceptibility to colds and flu.  Sophia's Kitchen Corner

In honor of Beth Israel Congregation celebrating their 150th Anniversary: 
Challah  

 

 Ingredients:

1 package yeast  

3 cups flour  

1/2 tsp. salt

(take our one cup flour beforehand)

 

3/4 C water

1/3 C oil

1/4 C honey

(heat to 120-130 degrees on stove, use thermometer)

Add to above mixture (take out 1 cup flour beforehand and mix with 2 cups flour at this time)

  

Beat in mixture with dough hook 2 minutes (medium speed) then add two eggs and remaining flour. Beat another 2 minutes.  

Refrigerate overnight. Next morning shape into Callah. Spread mixture (1 egg yolk and 1 tsp. water) to glaze.  

 

Let rise in warm place 110 degrees until double.  

Bake at 350 degrees for 25-30 minutes. Optional: sprinkle with sesame or poppy seeds after you wash it with the egg yolk and water mixture.

Not familiar with our Culinary Tour Dinners?

What they are:   

One weekend each month Sophia's Restaurant features a different region of the United States. This means we will create a four course meal themed around a specific region's cuisine; each course is is also paired with a wine and the attendee has the option of having the meal with or without wines. We also decorate the restaurant to fit the theme and find entertainment to accompany the meal. We think the Culinary Tour idea is a great way to give people a culinary escape in their own backyard (we also give away an incredible grand prize for one lucky winner- see about for rules and more info).

Debra Fitzgerald Collins 

As part of the Fairvew team, Debra  works in the front office assisting guests with hotel reservations and taking care of each guest's individual needs. When talking to Debra you may first take notice of her unmistakable New York accent.

Originally from upstate New York, Debra moved to the Jackson area about 23 years ago but still carries her New York roots. She has two sons, William and Benjamin. William is a graduate of Delta State University and Benjamin is a Sophomore at Ole Miss. In her spare time, Debra enjoys bowling, reading, traveling, and spending time with family and friends.

Debra joined the Fairview family in April of 2010. You can catch her mostly on weekends and working some week nights. We are very fortunate to have such a hardworking, caring, and genuine person as a part of our team! Debra, and the rest of the Fairview staff, will always work to make sure your stay at the Fairview is an unforgettable experience.
