Culinary Tour of Heartland
Sophia's Culinary Tour of America continues with a Tour of the Heartland on July 22 and 23. Attend 8 of the 12 culinary tour dinners and have your Tour of America Passport stamped at each dinner and be entered into a drawing to win a week long trip for two to California Wine Country! This trip includes accommodations in a luxurious bed and breakfast, personalized wine tours, and so much more!

What they are:
One weekend each month Sophia's Restaurant features a different region of the United States. This means we will create a four course meal themed around a specific region's cuisine; each course is is also paired with a wine and the attendee has the option of having the meal with or without wines. We also decorate the restaurant to fit the theme and find entertainment to accompany the meal. We think the Culinary Tour idea is a great way to give people a culinary escape in their own backyard (we also give away an incredible grand prize for one lucky winner- see about for rules and more info).

Sophia's Kitchen Corner

Fairview Inn Owners, Tamar and Peter Sharp, and their daughter, Sophie, recently took a trip to Peter's childhood home of London, England. While there, they were able to see many members of the Sharp family and were able to take home with them some baking secrets and recipes in Hereford, from Peter's sisters mother-in-law, Marion Stevens.
Flapjacks (not a pancake!)
Ingredients:
6 oz. oats Alternatives:
4 oz. margarine chopped walnuts
4 oz. sugar pumpkin seeds
1 t. syrup chopped almonds
pinch of salt
1 t. honey
Instructions:
Melt margarine, sugar, honey and syrup in a saucepan until runny
Place oats and salt in basin
Tip wet ingredients with dry and stir
Place and flatten in Pyrex
Bake at 350 degrees (180 degrees Celsius) for about 30 minutes
Welsh Cakes
Ingredients:
1 lb. flour 6 oz. sugar
4 oz. margarine 1/2 t. mixed spice
4 oz. lard 1 t. baking powder (optional)
4 oz. currants 1 egg
pinch salt 2 T milk
Sift the flour, baking powder and salt together. Rub in the fat and add the other dry ingredients. Beat the egg, lightly and add with enough milk to make a firm paste. Roll out on a floured board to a thickness of 1/4 inch and cut into rounds. Cook on a greased griddle for about 3 mins on each side, until golden-brown. Cool and sprinkle with sugar. Serve alone or with butter.

Caroline Fox
Originally from Hattiesburg, MS, Caroline is a recent graduate from the University of Mississippi. While at Ole Miss, Caroline studied Hospitality Management. She joined the Fairview Team at the beginning of June and is learning all aspects of working at the Inn (from front desk/concierge to operations of Sophia's Restaurant).
When not working at the Fairview, Caroline enjoys traveling and boating. She also very much enjoys the sport of tennis, learning to cook different things, and shopping.
Randon fact about Caroline: Her favorite flower is the Gerber Daisy.
So, stop by the Fairview Inn or Sophia's Restaurant and get to know one of the newest faces around the Inn!

The Help

The Help premiers at Malco Grandview in Madison, MS
(It is out for official release on August 10, 2011).
In town for the premier will be many of the film's crew and stars. The Fairview is honored to have The Help cast/crew with us to host a luncheon for the movie to help with their fundraiser for the Baptist Town Community Project in the Delta.
