Key Lime Pie

Ingredients:

Crust:

2C graham cracker crumbs

4 oz butter, melted

1C pecan pieces, pulsed in processor

1/2 C brown sugar 

Pie:

(2) 14 oz. condensed milk

8 egg yolks

1/3 C lime juice

1L lime zests

Directions:

Mix crust ingredients together, press into pie pan and bake 8 minutes at 325 degrees. Wisk pie ingredients together, put into cooled pie shell. Bake at 325 degrees for 15-20 minutes.

This Summer marks the 50th anniversary of the 1961 Freedom Rides. The Freedom Rides forever changed Mississippi and sparked for a movement that eventually led to huge Civil Rights successes.

 

There were 328 people arrested as Freedom Riders in Jackson between May 24 and September 13, 1961. They came in small groups via bus, train, and airplane, primarily from Montgomery, Nashville, and New Orleans.

 

 -Half were black, half were white

-One quarter were women

-40% were between the ages of 18 and 21

-The oldest Rider was 61, the youngest 13

-By place of birth- the Riders came from 39 states and 11 countries

-195 Riders were from the Deep South. Three of these riders were white.

-43 Riders, over 13%, were from Mississippi.

 

All Freedom Riders had one goal

in mind:

Change for Equality.

Ryan Bell

Originally from Jackson, MS, Ryan joined the Fairview family almost a year ago. His current position is Sous Chef at Sophia's Restaurant. He has extensive culinary experience such as most recently serving as Executive Chef at Atlantica Grille in Madison. His background includes receiving degrees from the University of North Carolina Wilmington in Philosophy, Religion, English/Creative Writing. After eventually finding his niche in cooking he apprenticed under several local Chefs including James Beard Award nominee, Tom Lambing.

In his spare time, Ryan enjoys spending time and his wife, Angela, and doing anything that involves horticulture.

When asked about the aspect that he enjoys most in his job Ryan says, "I love having the opportunity to see people on their best days-- weddings, birthday, etc. It is really exciting to be able to work in an atmosphere that revolves around so many special occassions."

What they are:

One weekend each month Sophia's Restaurant features a different region of the United States. This means we will create a four course meal themed around a specific region's cuisine; each course is also paired with a wine and the attendee has the option of having the meal with or without wines. We also decorate the restaurant to fit the theme and find entertainment to accompany the meal. We think the Culinary Tour idea is a great way to give people a culinary escape in their own backyard (we also are giving away an incredible grand prize for one lucky winner, --see above for rules and more info).
