Sweet Potato Biscuits
In honor of the Sweet Potato Queens:
Ingredients:
1 1/4 cups all-purpose flour
2 heaping tablespoons sugar
1/2 teaspoon salt
3/4 cup mashed cooked sweet potatoes
1/4 cup (1/2 stick) softened butter
2 to 4 T milk (depending on the moisture of the potatoes)
Directions:
Preheat oven to 450
Sift together flour, sugar, baking powder and salt. In separate bowl, mix sweet potatoes and butter, add the flour mixture to the potato mixture and mix. Then add milk a tablespoon at a time to mixture and continue to cut in.Turn dough out onto floured board and toss lightly until the outside looks smooth. Roll dough out to 1/2 inch thick and cut with biscuit cutter. Place onto greased pan and coat tops with melted butter. Bake for 15 mins (watch for browning).

Belhaven's earliest origins date back to the 1850's (the Fairview Inn was built in 1908).
The Belhaven Neighborhood is considered to be one most architecturally diverse neighborhoods in the United States.
Belhaven named itself after Belhaven University, one of Jackson's oldest institutions of higher learning, the main campus of which is located on a 42 acre plot of land within the neighborhood itself.

Get to Know Our Staff
Megan Whitten Marketing Coordinator Originally from Brandon, MS, Megan has been the Marketing Coordinator for the Fairview Inn for one year. She graduated Cum Laude from Ole Miss in December 2009 with a Bachelor's in Business Administration. Megan's favorite part of her job is all of the different people she meets while working at the Inn. She also very much enjoys all of her coworkers and loves being able to apply things she learned in school in the workplace. The Fairview holds a special place in Megan's heart as it is where she got married in July 2010. Megan was planning her wedding at the Fairview in January 2010 when she heard about the job opening and the rest is history! When not working at the Fairview Inn, Megan enjoys spending time with her family and husband and their two dogs, an English Bulldog named Winston and a Papillon named Gizmo.
