Red Snapper Ceviche
Ingredients:
1 pound skinless red snapper fillets, cut into 1/4 inch dice
3/4 C fresh lime juice
1/4 C fresh lemon juice
1 jalapeno, seeded and minced
1/2 C finely diced red bell peppers
1/2 C finely diced yellow bell peppers
1/2 thinly sliced small red onion
1 minced small garlic clove
Pinch of ground cumin
Pinch of crushed red pepper
Salt
1 T minced cilantro
1 T extra-virgin olive oil
2 T Tequila
Directions:
In a large bowl, toss the diced fish with the lime juice, lemon juice, jalapeno, red and yellow bell peppers, red onion, garlic, cumin, crushed red pepper, tequila, and season with salt. Refrigerate the snapper ceviche for 2-4 hours. Stir in the cilantro and extra-virgin olive oil and serve. |

Derek Shearril
Born and raised in Jackson, MS, Derek has been with the Fairview Inn for over 4 years. He enjoys his position with Sophia's Restaurant as dishwasher/line cook/maintenance man. Derek is our go-to guy for many different tasks at the inn. The aspect of his job that he likes most are his coworkers. He says "everyone here is fun to be around and has a good attitude when coming to work."
When not working hard at the Fairview Inn or at his second job, Derek enjoys spending time at home with his Mom.
We are very grateful to have such an enjoyable employee as Derek. He is definitely an important part and asset to our Fairview family.

Try a mayonnaise rub on them- let it sit overnight and wipe clean the next day. Voila, no rings! Best cleaner for carpet stains - resolve. Best window cleaner - vinegar, water and fresh lemon juice. Use a paper towel or newspaper, never a rag. |
